I’m Rene Averett and I am a food-aholic! I’ve had a lifelong love affair with food, but that doesn’t mean that I have been a gross over-eater all my life. I have obviously eaten more food than my body needs most of the time, but I haven’t over-indulged on a regular basis. Just cutting back on calories hasn’t worked well for me as I don’t regularly consume over 1200 calories a day. So, why was I unable lose the weight?
That’s what this whole blog is about. My journey, my weight loss and how I discovered the keys to making this work for me. Apart from being a yo-yo dieter for most of my life, I have also worked with computers from the early stage of huge mega-computers to the small tablets we now use daily. I am also a writer, making my living as a technical writer for the last decade or so of my employment with a gaming manufacturer in Reno, Nevada. Besides technical writing, I am also a novelist and do editing for other writers. I am now working on publishing a couple of novels this year under my pen name.
I am retired and live with my long-time roommate PK, two cats and a dog in south Reno, Nevada. I enjoy writing, reading, a bit of gardening and, obviously, cooking and creating recipes that are delicious and low in carbohydrates,
Hi Rene, I’m not sure if your blog is still active but it seems so because there are recent posts. I was trying to access the low carb recipe you have for English Muffins. Seems I downloaded the recipe a long time ago and just re-discovered it buried in one of my binders. I was going to try and make these (I’ve been trying to make low carb English Muffins forever), but when I read the directions, you mention “powdered milk”. However, on my copy of the recipe, there is no mention of powdered milk in the ingredient list.
So I came here to look at the recipe again, thinking there might be comments on it I could check or maybe you had changed the recipe. But, alas, clicking on the link gives me a “page not found” reply. Several of your older recipes do this as well. Can you please let me know what I need to do on this recipe?
On the ingredient list there is a call for 1/3 cup of heavy cream with hot water added to make a full cup. Is this the “milk” you are referring to? Was the “powdered” description an error?
I would greatly appreciate a reply. I’m exploring your blog and am excited to try some of the recipes. 🙂
Thanks, Susan. Yes, the cream/water combination works well in the English muffins. This was an adapted recipe from Alton Brown and I might have missed adjusting the powdered milk for the cream. I will need to check back through the recipes to see why some are not accessible or they may have been on the old website before I moved to a new host. Thank you for letting me know.
