Cookie Party – Low Carb Style

Cookies are one of my favorite things and they don’t need to be high in calories and carbs, but I do admit that you need to be willing to use specialized flours like CarbQuick, LC Foods, Bob’s Red Mill Baking Mix or other ones that are reduced in carbs. And you can also use Almond Flour, Coconut Flour, Hazelnut Flour, Soy Flour and Peanut Flour for your baking. Generally the nut flours don’t hold up as well as the wheat flours so they tend to be delicate cookies. You can also add in Whey Protein Powder – I usually use Vanilla Whey Protein Powder, which adds more flavor and texture along with more protein. But while I’m at it, all of these recipes can made with regular flour and sugar if you aren’t worried about the calorie or carb counts.
