Dixie Carb Counters All Natural White Bread Mix

I admit that I have a fondness for Dixie Carb Counters products and that’s because they taste good.  This is the first time I’ve tried their white bread mix as I usually prefer the wheat bread, but now and then it’s nice to have white bread in the house.  Besides, PK prefers it when making peanut butter toast.

This bread mix is billed as “One Step Homemade All Natural White Bread” and it is that.  It couldn’t be simpler.  Put the mix in a bowl, add egg and/or egg whites and butter. Then mix it together for about a minute.  The instructions say to use a whisk, which I tried, but find unsatisfactory as too much of the dough accumulates in the inner wires of the whisk and it’s just thick enough that it doesn’t want to release easily.  So I just used a big spoon and stirred really well, getting to the mix on the bottom of the bowl.

Put the mix in a greased (or cooking sprayed) bread pan and cook in a 325 degree oven for 50 minutes.  What could be easier?  And the result is a beautifully browned load of white bread that makes 24 thin slices at 2 net carbs each.

The flavor is great!  The ¾ cup of melted butter added to the mix insures that it will have a buttery delicious taste.  It holds up well when cut and stands up to the additional butter or peanut butter that you spread across it.

For breakfast today, I made French toast using two slices and I had a little trouble with a little-too-thin piece of bread absorbing the egg mixture and holding together, but it only broke into two pieces when I started to lift it from the soaking pan.  It did not alter the taste of the French toast in any way, so it was still a win.

This bread would also make excellent bread crumbs for making anything that requires them.  You could add additional ingredients, such as sugar substitute, cinnamon and chopped fruit (watch the carbs on that) to make a very tasty fruit bread.  One of the things I want to try with the next loaf that I make is adding yeast to it since this isn’t really a yeast bread, even though it has yeast flakes in it.

My silicone bread pan is slightly larger than the 9”x5” pan suggested in the instructions so the loaf is slightly flatter than the one pictured on the package, so I think it would be a regular-sized loaf in a normal bread pan.

New Hope Mills Blueberry Muffins, sugar-free and low carb.

I’ve made a couple of these breads from New Hope Mills as loaves and they are delicious.  When you consider that a slice of this or a single muffin is 3 net carbs, they are amazingly tasty.  Some pre-made low carb breads just don’t deliver on the flavor, but that isn’t the case here.  I made the mix into a dozen muffins today and they came out beautifully.  They rise nicely, brown evenly and taste as good as they look.

Do they taste like a muffin from a bakery? Not really, especially if the bakery is making those giant, super moist cake-like muffins.  This is a bread muffin and it is really good.  You can cut it in half and add butter and a tablespoon of low carb jam if you like.   It is like a typical mix muffin that you might buy at the grocery store.  And the mix is very similar to other store mixes.  You add eggs, water and oil and mix it until it is completely moistened, then spoon it into the pan and bake it.  Couldn’t be easier.

I confess, I do fiddle a bit with the mix though and I add two tablespoons of Vanilla Protein Powder and and extra egg white.  I use liquid egg whites.  This may have helped with the rising of the muffins a little, but it it totally an optional thing to do.    The muffin or muffin bread is equally as good without adding anything to the mix other than the eggs, oil and water.  This bread also makes a great base for French Toast.  If you make it as a loaf, just slice it and make the French toast from the slice.  For a muffin, you can tear the muffin into pieces and make Baked French Toast .

New Hope Mills also makes an Orange Cranberry Muffin Mix that is equally as tasty and can be baked in the same way and makes wonderful French toast.  The  mix makes one loaf or a dozen muffins and each muffin or slice is 3 net carbs.  It is reasonably priced, as low carb mixes go, and can be purchases from NHM’s web site or for a little less at Netrition.com.

I just made a loaf of bread using Dixie Carb Counters One Step Homemade Multigrain & Flax Bread Mix, then I gobbled down a slice. savoring every bite.  Yum!

Making this was very simple to do.  I just added 1 cup liquid egg whites, one large egg, 1 1/2 sticks (3/4 cup) of melted butter and 1/3 cup water to the mix that came in the pouch, stirred it together until all the flour was completely mixed in, then poured it into my slightly larger than normal silicon bread pan.  I popped it into my toaster oven, which was preheated to 325 degrees  for 50 minutes.  The result is an almost three inch high loaf of bread that is moist and delicious!

The taste of this bread is really very much like a wheat bread and many of the ingredients include wheat– like wheat protein, wheat gluten, wheat bran and unbleached wheat flour.  The flax meal is slightly nutty and blends in well.  The loaf makes 24 slices, about 3/8″ thick each, and is only 2 net carbs per slice.

This bread is great with butter and sugar free jam or it makes a great sandwich – two slices is only 4 net carbs, so that’s hard to beat.

The only drawback is that the bread should be eaten in three days and if you’re the only one eating it, that probably won’t work.  But, the good news is that it can be frozen.  So you can slice and wrap your bread in plastic wrap and freeze it for up to 3 months.  Try wrapping it in packets you will likely use in two days, say three or four slices in a pack.

So, I give this bread two flour-covered thumbs up for great flavor, easy to make and reasonably priced when looking at a low carb bread products.  I ordered mine from Netrition.com, but you can also order from Dixiediner.com.  The price at Netrition is lower than at the Dixie web site and you can get your entire order shipped for $4.95 in the U.S.

This bread mix caught my eye as I was placing a recent order on Netrition.com. I like rye bread and the idea of a low carb rye bread was instantly appealing. So I decided to order the mix and give it a try.

The package from Dixie Carb Counters is very appealing and sturdy, so it arrived with no damage and ready to go. In addition to the mix, you will need 1-1/4  cup of egg whites or 5 whole large or extra large eggs. I used the liquid egg whites in mine and it worked fine. You also need 1-1/2 sticks of melted salted butter, that’s 3/4 of a cup or 12 oz. for those who measure it out. And you need 1/3 cup water. You’ll use a 9”x5” standard size bread pan as this makes a full sized loaf.

From here, it’s easy. Just mix everything in a bowl and whisk until well blended, about 1 minute of mixing, then spread into the bread pan evenly and bake. It is really a snap making it.

Let it cool on a bread rack, then slice into 24 slices or cut it in half and freeze half for use later. Here’s where I had a bit of a problem. A 3/8” slice is really hard to cut without the bread crumbling a bit. It may be easier to slice it into 12 slices, then cut each of those in half. Or perhaps if it is partially frozen, it will cut easier.

The bottom line though is the flavor. This is a delicious rye bread. It’s a light rye, not like the dark deli bread. It would go great with corned beef or pastrami. The taste is really wonderful, especially for a low carb bread. If you’ve cut it into 24 even slices, each slice is 2 net carbs.

The price on this through Netrition is $7.95 for the mix to make one loaf. Add in the eggs and the butter and you’re about a $1.00 more into it, so it’s a $9.00 loaf of bread. But at least it’s a great tasting loaf for the price.

In summary: Great taste, easy to make, and worth the price if you are craving a rye bread. I give it 2 flour-covered thumbs up.
