A Delicious & Trendy Breakfast

Guacamole Toast

My gosh, May slipped right past without a post, although I got the Cinco de Mayo one up before the end of April! My life has been super busy, but I want to publish at least one new recipe this month. This one is simple but big on flavor and in demand right now.

Avocado toast is one of those quick breakfast items that people are finding popular in the past couple of years. You can even order it at IHOP and other restaurants. It’s simple to make at home, where you can use low carb bread and other ingredients to create a filling breakfast treat.

I use premade guacamole on my toast to add extra spice, but you can start with avocado slices. Avocados turn brown quickly once they’re cut open or the guac container is unsealed. A little lemon juice and plastic wrap can slow the process in any unused avocado.

Guacamole Breakfast (or Snack) Toast

Ingredients:
1 slice Keto Wheat Bread (or Keto bread of choice)
2 tablespoons Philadelphia Jalapeno Cream Cheese Spread
2 tablespoons Guacamole or Mashed Avocado
1 or 2 slices of cooked Bacon, broken into 2 pieces

Instructions:
Toast the Keto bread. Spread the cream cheese over the top and smooth. Spread the mashed avocado for the next layer and top with the cooked bacon.

Makes one serving.

Add-ins: You can easily add an egg to your toast and it won’t add another carbohydrate to it, but it will raise the calories to 342. You can also add a little cheese, either white cheddar or mozzarella and it won’t add carbs, but it will increase the calories. For a variation, replace the bacon with thin sliced ham. If you don’t want to put cream cheese on your toast, feel free to substitute mayonnaise. If you don’t like Jalapeno cream cheese, use plain cream cheese.

Inked Timberwolf Keto bread is 1 net carb per slice, Hero bread is 0 net carbs, Sola bread is 1 net carb, Franz and Oro Wheat are 2 nc, Carbonaut is 2 net carbs, and Alvarado St. Wheat Sourdough is 4 nc, I will be doing a post soon comparing some of the low carb breads I’ve tried. I used Timberwolf for this recipe and also tried the sourdough with it. Both are very good.

Break Tradition With This Sushi Roll

I love California roll sushi. Not so crazy about raw fish, but put cooked crab or shrimp on it and I’m in. The only problem is that pesky rice exterior that holds the whole roll together! So as I was chomping down on a forbidden rice encrusted treat, I wondered if riced cauliflower would work with it. Just like that, this experiment blossomed in my mind.

I took fresh cauliflower, pulled apart the flowerets and tossed them in the food processor, pulsing until I had rice sized pieces. Then I cooked them in a pan with about 1/4 cup of water until the bits were tender and most of the water had evaporated. I put them in a bowl and placed it in the refrigerator to chill for at least two hours.

When I was ready to make the sushi, I took out an ounce of cream cheese and softened it, then mixed it into the cauli-rice. From this point, I followed the recipe to make the roll. It came out great! Okay, not as pretty as a restaurant-bought one, but this was my first try at making it at home. I did buy a sushi kit that provided the bamboo rolling mat, other tools like a paddle and an avocado slicer, and a sushi knife.

Curious about options, I also tried this using riced turnips. This works well also, although the turnip retains more moisture than the cauliflower, so it’s best to drain after cooking and squeeze the excess water out in a paper or clean kitchen towel. The turnip has a tiny bite to it that actually works with the oriental flavors.

So, if you’re adventurous, try this California Roll recipe with either cauliflower or rice and let me know what you think.

California Rolls made with riced turnips

Low Carb California Roll

1 cup Cauliflower rice or riced turnips
1 ounce Cream Cheese, softened
2 Tablespoons Rice Vinegar
4 half-sheets Nori roasted seaweed
1/2 teaspoon Sesame Seeds
4 pieces Crab Meat or 4 tablespoons of Cracked Crab.
4 thin slices Cucumber, cut in sticks
4 – 8 pieces of Avocado, cut into sticks
4-8 pieces Zucchini, cut into sticks
4 Carrot sticks, about 3-1/2 inches long, cooked and chilled

Wasabi
Sliced Ginger
Sodium-reduced Soy Sauce

Cook cauliflower rice in a small pan or skillet with 1/4 cup water, bringing to a boil, then reducing to a simmer. Stir frequently and add additional water if it evaporates too quickly. Cook about 15 minutes until done. It sound be firm, but tender to chew. Drain any excess water off. Let rice chill for 1 to 2 hours. Mix cream cheese, rice vinegar, and sesame seeds into the rice. This will help to bind the riced vegetables together.

You will need a bamboo sushi mat for rolling. Place it on a counter or cutting board and cover with plastic wrap.

Cut the vegetables for the filling and ready the crab.

Riced cauliflower with sesame seeds, cream cheese, and rice vinegar mixed in plus sliced avocado and zucchini.

Place 1/2 sheet of nori, rough side up, on the plastic wrapped sushi mat. Spread 1/4 cup riced cauliflower over the nori evenly, leaving a 1/4 inch edge free at each end. Across the narrow side, lay down the vegetables and crab next to each other.

Begin to roll the nori across the length of it, using the mat to press it firmer in the roll as you go. Rolling the mat over the top keeps it clear of the actual roll as you work.

When complete, place the sushi roll on a plate and repeat with the remaining vegetable rice, vegetables, and crab.

Cover with plastic wrap and place in the refrigerator for at least an hour to chill and set. This also softens the nori. Cut each roll into five pieces with a sharp knife.

Place on small plates with about 1/4 teaspoon wasabi and several pieces of ginger to serve.

Makes 4 servings (1 roll each).

Crispy, Cool Salad for Warm Evenings

As we move into the dog days of August, I think about cool and easy to prepare dinners. That often means a salad. In this instance, it’s a lovely combination of shrimp, asparagus, avocado, and cucumber over a nice bowl of mixed salad greens. Requiring only a little cooking for the shrimp and asparagus, this dish comes together in about thirty minutes or less. The lemon vinaigrette can be prepared in advance and refrigerated until ready to serve.

For the salad:
8 oz Shrimp, peeled and deveined
2 cups Spring Mix Greens
10 spears Asparagus, trimmed and cut into one-inch pieces
1/2 Avocado, cubed
1/4 cup Red Onions, sliced
1 small Cucumber, peeled and sliced
Salt and Pepper, to taste

For the lemon vinaigrette
1/3 cup Olive Oil
1 large Lemon, juiced
3 tablespoons Lemon Juice
1/2 teaspoon Sugar-free Honey
1 teaspoon Dijon Mustard
1-2 cloves minced Garlic
Salt and Pepper to taste

Make the vinaigrette first. In a small bowl, add all the ingredients and whisk together. Taste to see if it needs more honey, salt, or pepper. Cover the bowl and refrigerate until ready to use. Whisk again before serving. You can store any excess dressing in the refrigerator for about one week.

Heat a medium-sized pot to boiling and add the shrimp. Cook for about three minutes, then drain and plunge into ice water to stop the cooking. Heat olive oil in a saute pan and add the asparagus spears. Cook for about three minutes. Drain the shrimp, pat dry with a paper towel, and add to the pan and stir fry them for a couple of minutes to get slightly browned.

Remove the shrimp and asparagus to a pan or bowl to cool. Using two salad bowls, divide the spring greens and arrange half the onions and half the cucumber in each bowl. Divide the shrimp and asparagus between the bowls, then add avocado pieces. Spoon about two tablespoons of the lemon vinaigrette the ingredients in each bowl.

Serves two.

Tip: Buy pre-cleaned and deveined  frozen shrimp to save time, and it make less mess in the kitchen. If you don’t have a fresh lemon, use 6 tablespoons of lemon juice.

Not quite Irish, but close… Welsh Cheddar Egg Melt

Well, I’m a little late for St. Patrick’s Day, and I’m presenting a dish that uses Welsh cheese rather than Irish, although Irish White Cheddar is also excellent in it. I actually made a dish last night that I thought would be good, but I wasn’t happy with result. I’m going to work the recipe a little more to make it much better. That will come along when I perfect it. Besides, St. Patrick was originally kidnapped from Wales and taken to to Ireland as a slave, so it sort of fits, doesn’t it?

This makes a tasty breakfast or brunch meal. Add a little fresh fruit or broiled asparagus for a more filling meal.

Welsh Cheddar Egg Melt

4 strips thick-cut bacon or 2 slices Irish Style Bacon
1 slices low carb Focaccia Bread, cut through the middle
1/2 ripe Avocado, mashed
2 slices tomato
1/2 cup shredded Welsh (or Irish) White Cheddar Cheese
2 Eggs
Salt and Pepper to taste

In a large skillet, cook the bacon until it is crisp. Drain on paper towels. Lightly toast the bread in the oven or toaster oven. Put bacon on top of bread, then layer a tomato slice and spread avocado over the it. Sprinkle shredded cheese on top.

Prepare eggs while the broiler heats. Use either fried, poached, or scrambled eggs to your preference. Salt and pepper to taste. Keep eggs warm.

Place sandwiches on the foil-covered broiler pan or in a pie tin and broil for 1 1/2 to 2 minutes until the cheese is melted. Top each sandwich with an egg and serve.

Serves two.

This focaccia bread recipe is 1.8 g of net carbs per slice. So, combined with this recipe, it’s only 4.7 net carbs if you use the whole slice or 3.8 g if you cut it in half.

Cinco de Mayo book plug and a new taco recipe

For those who like a reason to celebrate, Cinco de Mayo is just around the corner. That’s May 5th for anyone who doesn’t read enough Spanish to know. It’s a great celebration day for Mexico, but also just a good reason to raise a margarita in their honor and indulge in Mexican food. Of course, if you’re trying to stick to your low carb lifestyle, this presents some challenges.

One of our Reno Mexican restaurants has a sugar-free orange margarita made with Crystal Light that is not bad at all. If you’re making them at home, you can buy Skinny Syrup sugar-free margarita mixes in syrup form from Amazon. They also have a mojita mix if you prefer that flavor. Or you can find recipes on line for sugar free to make at home, like this one for a Skinny Margarita.

But moving along to the food, it is difficult to eat out and not indulge with more carbs than you want in your meal. Some dishes, like fajitas are not bad in carbs, but the tortillas, beans, and rice will really slam you, so best to avoid going out unless you can say no to the side dishes and just make something at home.

As a reminder, if you’re looking for low carb flour tortillas, most stores carry La Tortilla Factory or Mission flour tortillas in the low carb version. These vary from 3 net carbs to 6 net carbs per tortilla, so be sure to check the package for the carb count. For corn tortillas, I haven’t found a low carb offering, but I do have this recipe that is similar, golden flax meal tortillas.

Grilled Pork and Apricot Tacos with Avocado Crema

Now, for a new recipe that I tried last week, here’s a very tasty pork taco with an apricot salsa. This can also be made with peaches. I settled on apricot because I had some in my freezer and I couldn’t find a ripe peach at the grocery store. Using fresh is better than a frozen fruit that doesn’t look quite as attractive, but it tasted very good.

1 large  (8 oz) boneless Pork Loin Chop, about 1/2 inch thick
1/2 tsp. Chipotle Powder
1/2 tsp. Cumin
1/4 tsp. Oregano
1/4 tsp. Garlic Powder
1/8 tsp. Coriander
1/8 tsp. Allspice
1/2 teaspoon Salt
1/4 teaspoon Freshly ground Black Pepper
1 tbsp. Olive Oil, divided
1 Avocado, diced
1/4 cup Sour Cream
1/4 teaspoon Cayenne Pepper
1 Peach or 2 Apricots, chopped
1/2 Green Onion, finely sliced
Juice of 1 lime, divided
1 1/2 tbsp. freshly chopped Cilantro
1/2 tsp. Sugar Substitute
4 Low-carb Flour Tortillas
Cilantro leaves, for serving (optional)

In a large bowl, add chopped apricots or peaches, shallots, cilantro, sugar substitute, 1/2 the lime juice, and 1/2 tablespoon olive oil. Mix together well and season with salt and pepper to your taste. Cover and chill until ready to use.

In a big bowl, add chipotle powder, cumin, oregano, garlic powder, coriander, and allspice and salt and pepper. Mix all together, then add the pork and cover it the seasonings on both sides. Let sit while you mix the avocado crema.

Using your food processor, add the chopped avocado, sour cream, 1/4 teaspoon cayenne pepper, and the rest of the lime juice. Blend until it is smooth and creamy. Scrape down the sides with a silicone spatula if necessary. Set aside.

Grill pork chop on an outdoor grill or in your grill pan for three minutes. Turn to grill the back side for another two to three minutes until the pork is done. Let rest a few minutes, then slice thinly.

Heat the tortillas on the grill or in the grill pan until they are hot. You can also do this over an open gas flame allowing them to blister or bubble, then flipping to the other side. Top each tortilla with 1/4 of the avocado crema, then the pork, and top with the salsa.Garnish with cilantro if you wish.

Makes 4 tacos.
