A Mexican Cheese Pie Variation

Photo: Chicken Chile Rellano PieWhile a cheese pie is a lot like a quiche, it’s not exactly the same. It’s the basic recipe adapted with different ingredients that takes it on a different path. In this case, our cheese pie is similar to the Chile Rellano casserole but with a couple of differences. This recipe is adapted from Miz Liz at Low Carb Friends. I made a few adjustments and changes to spice it up a little more.

It cooks quickly and makes a thick, satisfying slice of pie. It will serve six average appetites, but those bigger eaters should be content with one-quarter of the pie.  You can dress it up when you serve it with other go-withs like pico de Gallo, avocado or guacamole, and/or sour cream.

If you want it to be spicier, add more fajita or taco seasoning to it. Don’t want it spicy at all? Omit the seasoning and simply add salt and pepper. While it does use a low carb baking mix – the original recipe came from Carbquik’s web site -, you don’t have to use it. Omit the flour if you wish, or simply use 1 tablespoon of any low carb flour to help thicken it.

Chicken Chile Rellano Casserole

2 4 oz. cans chopped Green Chilies, drained
1 cup shredded Chicken
1/2 cup Onions, chopped
2 cups shredded Cheddar Cheese or Cheddar Jack Cheese
1/2 cup Cream plus 1/2 cup Water
1 cup CarbQuik mix or other Low Carb Baking Mix
1 – 2 tablespoons of Fajita or Taco Seasoning Mix
4 eggs

Preheat oven to 425 degrees (F.) Grease an 8″ pie plate or casserole dish or spray with baking spray.

Drain the chiles and spread them over the bottom of the pan. Top with cheese, then spread the chicken and chop onions over the top.

In a large bowl, beat the eggs, cream, water, seasoning, and baking mix together until it is completely mixed using a spoon or silicone spatula. Pour over the chicken and cheese. Place pie pan on a baking sheet and bake in the center of the oven for 25 to 30 minutes. Insert a knife in the middle to check if it is fully set.

Cool for about 10 minutes to allow it to finish setting up to make it easier to cut. Serve with sour cream, pico de gallo, and/or guacamole to garnish. A green side salad works well with this dish.

Makes 4 to 6 servings, depending on appetite.

Tip: For those who want a meatless dish, simply omit the chicken.
If you would like to add corn to it, use Dynasty Baby Sweet Corn and chop it up. It adds the flavor with only 0.3 carbs extra per serving of 1/6.

Simple Cheese Bread Rounds

As bread for sandwiches or a snack, these easy-to-make cheese rounds are sturdy enough and quick to make. The recipe came from DCC Carb Counters using their Bakesquick for the small amount of flour they use. Although I haven’t tried any other flour options, I believe any low carb baking mix, or almond or coconut flour will also work. If you use coconut flour, use half the amount and add another egg white.

You can add any number of spices or seeds to the recipe to vary the flavor. Use hard cheeses, such as cheddar or Swiss for at least one of the options.

I used two of these rounds to make a chicken salad sandwich, and they worked beautifully. They cool to a sturdy, but still soft cheese bread round that holds up to the meat, mayo, lettuce, and tomato. I don’t know if it will work with a hamburger, but it might.

Cheese Bread Rounds

1/3 cup Carb Counters™ Bakesquick™
1/4 cup Shredded Sharp Cheddar Cheese
1/4 cup Parmesan or your favorite blend of shredded cheeses
2 Large or Extra Large Egg Whites or 6 tablespoons Liquid Egg Whites
1/2 teaspoon Mrs. Dash Garlic & Herb Seasoning *

Preheat Oven to 350°. Spread a sheet of parchment paper on a cookie sheet or pizza pan (or coat the surface with non-stick cooking spray.)

In a mixing bowl, add all the ingredients and stir until they are blended together. Separate into 6 tablespoon-sized pieces and roll into balls. Place each on your cookie sheet, allowing 4″ between balls.

Use a piece of plastic wrap to press balls down to 4″ wide rounds. A plastic baggie works well to put your fingers in to do this. Bake for 12-15 minutes until they are a light golden brown. Cool on a rack.

Makes 6 flat bun-size rounds.

* You can use any add-ins to enhance the flavor that you like. Suggested seasonings are Italian, dried chives, dried onions, dried dill, and Mexican blend herbs for a spicy flavor. You can also add in sesame seeds or poppy seeds.

Tasty BBQ Chicken Biscuit Rolls

Want a low carb variation of the BBQ Chicken that tastes great and is pretty easy to do? To make these, I used Carbquick from Tova Foods. You could also use Bakesquick from Dixie Carb Counters. If you use other flours, they may not hold together as well and you’ll need to add butter and baking powder. This uses precooked rotisserie chicken, which makes it a great way to use any extra chicken.

You can order either Carbquick or Bakesquick from Netrition.com or from Amazon. It may be a little higher from Amazon, but if you have Prime, you may save on the shipping.

BBQ Chicken Biscuit Rolls

2 cups CarbQuick
1/4 cup Water
1 teaspoon Garlic and Herb Seasoning
1/2 cup G. Hughes Sugar-free BBQ sauce
1 1/2 cups shredded rotisserie chicken
1/3 cup Onion, finely chopped
1 cup shredded cheese
1/4 cup parsley, chopped

Preheat oven to 425 degrees (F.) Prepare a baking pan with either a silicone mat or parchment paper.

Mix the Carbquick in a large bowl with about 1/4 cup of water. Add enough that it pulls together into a ball, but don’t get it too moist. It will roll out better if it is a stiff dough. Form the dough into a 5-inch x 3-inch log, then put in on a silicone mat or wax paper covered board. Place a sheet of wax paper over the top and press it into a rectangular shape. Use a rolling pin to roll it out to about 10 inches long by 6 or so inches wide.

Put BBQ sauce in a cup and use a basting brush to spread about half of it over the top of the biscuit dough. Add the rest to the diced or shredded chicken. Spread the chicken evenly over the dough, allowing a slight edge on each side for rolling the dough. Top with chopped onions, cheese, and sprinkle on the parsley.

Roll the dough on the long side to form a roll-up. The dough may break in places, so pat it back together as you go. If it becomes difficult to roll, then pull the other side to meet the rolled side and press together to seal. Cut the roll into 8 slices.

Place slices flat with the filling up on the prepared baking sheet. Bake for 15 to 18 minutes until they are golden brown and the cheese is melted.

Let cool about 5 minutes, then serve with a poblano ranch dressing or more BBQ sauce. Makes 4 servings of two rolls each.

Perfect Cake to combine with fruit

A sign of spring in the Truckee Meadows is a farmer’s fruit stand on a street or parking lot near your house as some of the California growers begin bringing their spring harvest to the Reno area. We have one who sets up on the corner of the road to our house, and for the last three weeks, he’s been offering oranges, mangoes, cherries, and strawberries fresh from the farms. Nothing beats fresh, plant-ripened berries with their wonderful sweet taste. The first batch we bought could have been a little riper before picking, but the boxes from last weekend — perfection!

When you have sweet, flavorful strawberries, they just call out for cake and whipped cream. It’s a bit of an indulgence when you’re counting your carbs, but they are within limits when you mix the berries with a granulated sugar substitute, and you make a low carb cake. While not a shortcake, this recipe for an almond-flavored cake is moist and delicious complimenting the berries so well. You can use it for any kind of fruit you’d like for the topping or put a sugar glaze (with a sugar substitute, of course) over the top to serve with only a trio of raspberries and a mint leaf for garnish.

I made mine using Dixie Carb Counters Bakesquick, but the original recipe from Bob’s Red Mill called for almond flour. You can also use a combination of a low carb flour with almond flour. I changed the recipe to add in ricotta cheese, which adds to the moistness and flavor of the cake. Since it calls for coconut flour, I altered the egg option to 1 whole egg and 2 egg whites to give it more lift. You can use liquid egg whites for this.  I changed the proportions to a small cake recipe. If you want a large cake, double the amounts of all ingredients and use a 9″x13″ cake pan.

Moist Almond Cake

Based on a recipe from Bob’s Red Mill as made by Rene Averett

6 tablespoons Butter
1/2 cup Sugar
1 Egg
2 Egg Whites
2 tablespoons Cream or Buttermilk
2 tablespoons Water
2 tablespoons Whole Milk Ricotta Cheese
1/2 tsp Almond Extract
3/4 cup Low Carb Flour
1/4 cup Coconut Flour
Pinch Salt
1 tsp. Baking Powder

Preheat oven to 350 degrees (F.). Prepare a 6-inch square baking pan by putting parchment paper on the bottom, then spraying the bottom and sides with baking spray.

In a medium-sized bowl, add the butter and sugar substitute and use a mixer to cream together until it is smooth. Add in the egg and egg whites and beat until they are fully mixed in. Add cream, ricotta cheese, and almond extract and mix until blended.

In a separate small bowl, mix flour and coconut flour with the salt and baking powder. Add the flour to the egg mixture in three batches and beat each addition until all the flour is mixed in. You will have a thick batter. Let it sit a few minutes. Coconut flour expands as it gets wet, so you may need to add a little water to have an easily spreadable batter.

Spread into your cake pan and bake for 25 to 30 minutes until the cake is done. Test with a toothpick in the middle that should out clean.

Remove to a rack to cool about 10 minutes, then remove from the pan. If the cake has not pulled away from the sides of the pan, run a plastic knife around the edges, then put a plate over the pan and flip it. Remove the parchment paper if it flipped out with the cake.

Let cool, cut into slices and serve with berries and whipped cream or make an icing to top it.

Makes 6 to 8 servings. I cut it in 6 servings initially, but with the berries and cream, a smaller slice works great.

To my shame, I didn’t take a photo of the cake with the strawberries and whipped cream on top.  I will be doing this recipe again in a couple of weeks and will add a photo then.

 

Broccoli Bacon Bites appetizer for any party

Recently, this recipe came around on my Facebook feed as one of those tasty, simple-to-make appetizers that work well for a party. The original recipe said to fry them in fryer– you can do that if you’d like, but I wanted mine to be a little lighter and without the extra oil flavor, so I decided to bake them.

To make this low carb required only one change, swapping out regular flour for low carb flour. In my case, I used Bakesquick, but you can use whichever one you prefer, such as almond flour or CarbQuick.

While I simply dropped my batter on a parchment paper, you can also put these in mini cupcake pans with papers so they retain a more compact shape. This is a versatile recipe and you can easily swap in cauliflower for the broccoli, add peppers, or other spices to it to personalize your bites.

Broccoli Bacon Bites

1/2 cup Bacon, chopped
3 cups Broccoli, chopped (or Cauliflower)
1 teaspoon Salt
1/4 cup Water
4 Eggs
1 teaspoon Pepper
2 cups Cheddar Cheese, shredded
1/4 cup Green Onions, chopped
1/2 cup Low Carb Flour

Preheat oven to 375 degrees (F.) Prepare a baking pan with parchment and spray with oil.

Put broccoli in a microwaveable bowl, add salt and water. Microwave for 3 minutes until almost tender. Drain.

In a bowl, put all the ingredients and mix together well. Use a small scoop to form balls and place each on the parchment-covered baking pan.

Cook for 15 to 18 minutes until golden brown.

Remove to serving plate and put out a bowl of Ranch Dressing for a dipper.

Makes 40 to 45 bites. (I got 42, but some were quite a bit larger than the rest.)
