A Simply Delish Vegetable Pie

Here’s recipe with a long list of ingredients, but it really goes together pretty quickly once the vegetables are cut up. The taste is perfect with the hint of celery and potato-like texture that comes from the celery root.  If you can’t find celery root, then substitute in kohlrabi or turnips, but the celery root is worth finding if a market near you carries it.

I used Carbquick for my biscuits, which is available from Netrition.com and Amazon. You can use any low carb flour to make them, although the almond flour and coconut flour will have a different taste and texture as well as being slightly higher in carbs.

If you’re not aiming for a meatless meal, this is a yummy side dish for any main meat, such as chicken, pork roast, or steaks.  Would go very well with salmon or any white fish.

Cabbage, Celery Root, & Squash Pie

For the filling:
2 cups Cabbage, chopped
1/2 cup Celery Root, cubed
1/2 cup Butternut Squash, cubed
1/4 cup Zucchini, sliced
1/4 cup yellow onion
6 Baby Carrots, diced
1 tablespoons Butter
1/3 cup Cream
1 cup Vegetable Broth
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1 tablespoons all-purpose Low Carb Flour
1/2 tablespoon Olive Oil
1/2 teaspoon Mrs. Dash Table Blend Seasoning

For the Biscuits:
1 cup low carb biscuit mix or low carb flour
1/4 teaspoon Baking Powder (if not using a mix)
3 tablespoon Butter, cold
2 to 4 tablespoons cold Water
1/4 cup Egg Whites (if using coconut flour)

Preheat oven to 400 F.degrees. Have a small baking pan (6″x6″) or loaf pan ready.

In a medium skillet, add 1 tablespoon Butter and the cabbage. Stir and cook for about 5 minutes or until the cabbage is limp and shiny. Put cabbage in a bowl.

In the same pan, add the olive oil and onions and cook until it is translucent, then add the celery root, butternut, carrots, and onions. Cook for about 10 minutes, stirring frequently. Remove to the same bowl as the cabbage.

In the pan, add the broth, thyme, oregano, and seasoning. Stir and cook until it is heated, then add the cream and mix it in. Add the flour to begin thickening it. You can also use a teaspoon of guar gum to help it thicken more. Mix the flour in well, then reduce heat to a high simmer. Cook and stir until it begins to thicken. Add the vegetables back to it and stir it well, reduce to a low simmer and cook until the sauce is about the thickness of heavy cream.

Remove from heat. Prepare the biscuit dough.

Biscuit dough
Use 1 cup low carb Biscuit flour mix, such as CarbQuick, Bakesquick, or a similar flour product. You can use a combination of 1/2 cup almond flour plus 1/2 cup coconut flour or soy flour. Mix 3 tablespoon butter into the flour until it resembles crumbles. Add 2 or 3 tablespoons of cold water. If you use coconut flour, you will need to add a 1/2 teaspoon baking powder to it and 1/4 cup of egg whites to get it to rise. Add the egg whites after you’ve added the butter and mixed it in.

Divide the biscuit dough into four balls and shape each one into a circle and distribute evenly over the top of the vegetables. If it is easier to roll the dough out to the shape of your pan, then do that or shape it to fit.

Bake about 20 to 25 minutes. Let rest a few minutes, then serve. Makes 4 servings.

Tasty BBQ Chicken Biscuit Rolls

Want a low carb variation of the BBQ Chicken that tastes great and is pretty easy to do? To make these, I used Carbquick from Tova Foods. You could also use Bakesquick from Dixie Carb Counters. If you use other flours, they may not hold together as well and you’ll need to add butter and baking powder. This uses precooked rotisserie chicken, which makes it a great way to use any extra chicken.

You can order either Carbquick or Bakesquick from Netrition.com or from Amazon. It may be a little higher from Amazon, but if you have Prime, you may save on the shipping.

BBQ Chicken Biscuit Rolls

2 cups CarbQuick
1/4 cup Water
1 teaspoon Garlic and Herb Seasoning
1/2 cup G. Hughes Sugar-free BBQ sauce
1 1/2 cups shredded rotisserie chicken
1/3 cup Onion, finely chopped
1 cup shredded cheese
1/4 cup parsley, chopped

Preheat oven to 425 degrees (F.) Prepare a baking pan with either a silicone mat or parchment paper.

Mix the Carbquick in a large bowl with about 1/4 cup of water. Add enough that it pulls together into a ball, but don’t get it too moist. It will roll out better if it is a stiff dough. Form the dough into a 5-inch x 3-inch log, then put in on a silicone mat or wax paper covered board. Place a sheet of wax paper over the top and press it into a rectangular shape. Use a rolling pin to roll it out to about 10 inches long by 6 or so inches wide.

Put BBQ sauce in a cup and use a basting brush to spread about half of it over the top of the biscuit dough. Add the rest to the diced or shredded chicken. Spread the chicken evenly over the dough, allowing a slight edge on each side for rolling the dough. Top with chopped onions, cheese, and sprinkle on the parsley.

Roll the dough on the long side to form a roll-up. The dough may break in places, so pat it back together as you go. If it becomes difficult to roll, then pull the other side to meet the rolled side and press together to seal. Cut the roll into 8 slices.

Place slices flat with the filling up on the prepared baking sheet. Bake for 15 to 18 minutes until they are golden brown and the cheese is melted.

Let cool about 5 minutes, then serve with a poblano ranch dressing or more BBQ sauce. Makes 4 servings of two rolls each.

Yummy Chicken and biscuit Casserole

Moving into fall, it’s time for those delicious and comforting casserole dishes that make you feel warm all over. The original recipe for this dates back to my childhood, which was a long time ago in a galaxy no longer in existence. Well, maybe not that long, but you get the idea. Originally, it was made with Bisquick and creamed tuna, but for my low carb variation, I adapted it to use chicken and some other alternate ingredients.  Although the ingredient list is lengthy, it comes together easily and is well worth the effort.

Skillet Chicken Pie

1-1/2 cups cooked Chicken , cubed or chopped
1/2 cup Heavy Whipping Cream
1/2 cup Chicken Broth
1 cup Kohlrabi or Zucchini
1-1/3 cups Green Beans, chopped if you wish
1/4 cup Mushrooms, chopped or sliced
1 cup Cauliflower
1/2 medium-sized Bell Peppers
1 tablespoon Butter
1/4 cup Onions, chopped Onions
1 teaspoon Garlic
1/2 teaspoon Salt
1/4 teaspoon Pepper
1/2 teaspoon Rosemary
1/2 teaspoon ground Thyme
1/2 tablespoon Cornstarch (optional)

For the biscuit topping:
1-1/2 cups low carb Baking Mix or other Flour
3 tablespoons Butter or Shortening
1 tablespoon Cold Water
1/2 cup Finely Shredded Sharp Cheddar Cheese
1 teaspoon Garlic powder

Preheat oven to 375 degrees (F.)

Cut the kohlrabi and cauliflower into bite-sized pieces and either par boil them for about three minutes or cook in the microwave for about 2 minutes. Chop the bell pepper and set aside. If you use zucchini for the kohlrabi, you don’t have to precook it.

Use a stove-to-oven pan to make this. I used my deep copper skillet, but a cast iron skillet or other similar item would work. Otherwise, you’ll need to transfer the chicken base sauce to a baking dish once you’ve cooked it.

In the cooking pan, add 1 tablespoon butter and melt it over medium heat. Add garlic and onions and stir until the onion is tender. Add the bell peppers and sauté a minute or two. Next, add the chicken and stir, mixing it altogether. Add the cream, broth, and the seasonings and stir to mix well. Add kohlrabi cauliflower, and green beans and stir to mix. Heat until it is bubbly.

Add a little water to a cup and stir in the cornstarch if you’re using it, then stir it into the skillet. If you aren’t using it, continue to cook until the sauce thicken some. Once the sauce thickens, turn off the heat and remove from the heat source.

In a bowl, mix the baking mix or low carb flour, a little salt, and garlic powder together. If your using a flour, add in 1/2 teaspoon baking powder. Cut in the butter or shortening or mix it in with your clean hand. Add the water, 1/2 at a time and mix it into the dough until you have a dough that pulls together into a ball easily, but isn’t too sticky. If it needs more water, add a little at a time. Then add the cheese and knead it into the dough. Separate the dough into six pieces and shape into balls, then press flat to a biscuit size.

If you need to transfer the chicken mixture to a baking dish, do it now. If your pan can go in the oven, proceed. Put the biscuits on top of the chicken mixture and spray the tops with a butter-flavored spray.

Bake for 20 to 25 minutes until the biscuits are a golden or light brown. Remove and cool for about 10 minutes before serving. Makes 6 servings.

Note: This is about .5 carbs lower per serving if you do not use cornstarch.

Don’t want to make biscuits? You can substitute in 2 basic magic muffins made in a cup, cut horizontally into thirds, then put on top of the chicken base. Sprinkle with the cheddar cheese and bake.

Biscuit Based Pumpkin Cinnamon Rolls

I missed posting last week, although I did pop a recipe in over the previous weekend. I went to San Francisco for a few days to see the incredible Josh Groban in concert at the Masonic Theater. It was the first time I’ve had the pleasure of hearing him sing in live performance and it was a wonderful evening. Getting a cab back to the hotel was not so great, but that’s the city for you. While my roomie and I were there we went to a really good Chinese Restaurant near the hotel. Wonderful food and if you’re in San Francisco I highly recommend Tian Sing. It’s November and I’m still on a pumpkin kick because it’s that time of year and pumpkin is really more versatile than you might have imagined. A couple of months ago I posted reviews for a couple of low carb cinnamon roll mixes and I said then that I was going to try making one from scratch. As I was making low carb biscuits the other day, I figured out how I would make the biscuit version of cinnamon rolls and since it is pumpkin season, I added some puree to the dough. They are delicious. This recipe is entirely my own concoction so do let me know how you like it if you try it.

Pumpkin Biscuit Cinnamon Rolls

1 cup Low Carb Flour
2 tablespoons Shortening
1 tablespoon Sugar Substitute
1 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1 teaspoon Vanilla Extract
1 tablespoon Ricotta Cheese
3 tablespoons Pumpkin Puree
2 tablespoons Vanilla Whey Powder
1/2 teaspoon Cinnamon

2 tablespoon Butter, softened
1 teaspoon Cinnamon
1 teaspoon Pumpkin Pie Spice
2 tablespoons Brown Sugar Substitute
1 tablespoon Sugar-Free Maple Syrup
1/4 cup Pecans, chopped

Preheat oven to 375 degrees (F.)

Prepare topping:   In a bowl, place butter, 1 teaspoon cinnamon, pumpkin pie spice, brown sugar substitute and maple syrup and mix together to form a paste.

Mix the biscuit dough: Put flour, protein powder, baking powder, baking soda, and sugar in a bowl and cut in the shortening until tiny crumbs form. Add the vanilla extract, ricotta cheese, pumpkin and cinnamon. Add 1 tablespoon cold water and mix until the mixture forms a stiff dough. If necessary, add more water a little at a time. The dough should be stiff and not too sticky.

Roll out biscuit dough into a rectangle about 6″ x 8″.

Spray a sheet of waxed paper with baking spray and turn the dough onto the paper. Pat into a rectangle about 6″x 8″ and about 1/2 inch thick. Spread the topping over the rolls evenly, going to the edge on all sides except for about 1/2 inch on one short side. Sprinkle the pecans on top evenly.

Spread filling almost to the edge on all sides, leaving 1/2″ on the short side.

 

Using the wax paper to lift, roll the dough from the short side with toppings and finish with the opposite side with no topping. Seal the dough where it meets and place the roll seam side down. Cut the roll into 6 rolls. Place on a sprayed baking pan and bake for 18 to 20 minutes.

Rolls in oiled pan and ready to bake.

While dough bakes, make an icing with 1/2 cup Powdered Sugar Substitute, 1 tablespoon softened Butter and enough water to make a spreadable icing.

Let rolls cool for a few minutes, then spread with the icing and serve. Makes 6 rolls.

Brunch with Biscuits and Pumpkin Chorizo Sausage Gravy

Halloween is almost upon us and I am still celebrating pumpkin. If you’d like to make a special breakfast or brunch meal for Halloween or Thanksgiving or Christmas or traditionally for New Year’s Day, you can’t go wrong with biscuits and gravy. And yes, they can be made low carb.  In fact, this dish, using one biscuit, is less than 4 net carbs when made with CarbQuick.  It may be a little higher with other low carb flours.

Boy-oh-boy, this is a favorite dish of mine, so I have been working to get a really good recipe for them. I use CarbQuick for my low carb flour baking mix choice, but you can also use Bob’s Red Mill Baking Mix or Dixie Carb Counters or LC Foods. It might work okay with almond flour, but it’s best to try to mix another flour in with it. This recipe for biscuits is the tastiest one I’ve come up with so far. The gravy has a fall twist to it and also a bit of a spicy touch as I add pumpkin puree and chorizo sausage along with the regular sausage. It is a great flavor combination. Be bold. Give these a try.

Best Savory Biscuits

1 cup Low Carb Flour
2 tablespoons Shortening
1 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1 teaspoon Sugar Substitute
1/3 cup Cheddar Cheese, shredded
1/2 teaspoon Garlic powder
Pinch Salt
Pinch ground Thyme
1 to 2 tablespoons Cold Water

Preheat oven to 375 degrees (F.) Spray a baking pan with cooking spray.

In a medium bowl, add the flour, baking powder, baking soda, garlic powder, salt, thyme and sugar substitute and mix together. Add the shortening and cut into the flour mixture with a pastry cutter or fork until the mixture resembles crumbles. Add 1 tablespoon of water and mix it into the dough. If it doesn’t pull together easily, add a little more water. You want the dough stiff but completely mixed.

Mix in the cheddar cheese until distributed. Divide the dough into quarters. Shape each quarter into a 3-inch round about 1/2-inch thick and place on the baking pan.

Bake for 18 to 20 minutes until golden brown. Makes 4 biscuits.

Pumpkin Chorizo Sausage Gravy

1/2 cup Heavy Whipping Cream
2 tablespoons Low Carb Flour
4 oz. Pork Sausage
2 oz. Basque Style Chorizo Sausage
1 teaspoon Worcestershire Sauce
1/2 teaspoon Cayenne Pepper
1 tablespoon Pumpkin Puree

In a medium skillet, brown the sausage and chorizo, breaking it into smaller pieces as you cook it. When lightly browned remove to a paper towel on a plate to drain. Stir the low carb flour into the grease in the pan to make a paste. If there isn’t enough, add a little oil to the pan.

Stir in the heavy whipping cream and 1 cup of water, the Worcestershire sauce and the cayenne pepper and mix well. Then stir in the pumpkin puree and the cooked sausage. The sauce will thicken as it cooks.

Split the biscuits in half and pour 1/4 of the sausage gravy over each biscuit.

Makes 4 servings or 2 hungry-man (or woman) servings.
