Slow Cooker East Texas Jambalaya

Hey, y’all!  This here recipe is a variation of one PK’s mother, Toni Kelly, used to make and we’ve adapted it a little to make it low carb and add more meat to it. The changes are in the choices of vegetables and tomatoes that go into it.  Always, a southern recipe includes the “holy trinity” of Cajun-cooking, which is celery, bell peppers, and onions.  This is a delicious and slightly spicy dish that warms you up on a cold day and just bursts with flavor as you eat it.

And it is pretty easy to make.  If you want to put it on before you leave for work, then do the prep work, including lightly cooking the chicken and bell pepper, onions, and celery the night before and refrigerating until morning when you put it all in the slow cooker.  Then just add the rest of the ingredients, except the shrimp and mushrooms, put it on low to cook all day.  When you come home, check the seasoning mix, adjust, then add the shrimp and mushrooms and cook for another 30 minutes to cook the shrimp.

You want to look for the lowest net carbs for the tomatoes that you can find. Check the nutrition information on the back of the can, which is per serving, and find the carbohydrate count, then subtract the fiber. This is the net carb count of one serving. I used canned tomatoes that were 8 net carbs per cup for the calculation. You can add more chicken without increasing the carb count, but the calorie count will go up accordingly. If you are making chicken only, then use two whole breasts (4 of the half breasts).

1 whole Chicken Breast, skin removed
1 link Andouille Sausage
1 oz. can whole or diced, peeled Tomatoes
1 cup Butternut Squash, cubes (optional)
1 cup Green Bell Peppers cut into strips
1 cup Zucchini, (Green and Yellow), sliced
3 stalks Celery, trimmed and chopped
1 cup Chicken Broth
1/3 cup Mushrooms, sliced
6 oz. Shrimp, peeled and cleaned
1/2 cup Ham, diced
1 teaspoon Olive Oil
Salt and Pepper to taste
1/2 tablespoon Garlic
1/2 tablespoon Creole Seasoning
1/2 cup Onions, Chopped
2 tablespoons Pumpkin Puree

Cut chicken into cubes or small bite-sized pieces. Cut the sausage into small pieces and dice the ham. In a large skillet, add 1 teaspoon olive oil and over medium heat, sauté the garlic, celery, and onion until the onion sweats and softens a little, then add to the slow cooker. Add green peppers to the skillet, then the chicken. Add a little more olive oil if needed. Cook for a couple of minutes to just get the chicken to start to firm up. This is mostly to add flavor to it before adding to the cooker. Put the chicken and peppers in the cooker.

Add the tomatoes, zucchini, butternut squash, chicken broth, Creole seasoning, salt and pepper. Turn the cooker on High and cook for 1 hour, then reduce it to low setting. Let cook for two hours. Check the seasonings in the sauce and adjust if needed, then add the ham and the pumpkin puree. The pumpkin will work to thicken the sauce and adds a little flavor. Cook another 30 minutes, then add the shrimp and the mushrooms. Cook another 30 minutes or until the shrimp are cooked through, but not overcooked.

Serve with cauli-rice or stir-fried angel hair cabbage to keep the carbohydrates low. The butternut squash adds an interesting flavor to the Jambalaya, but can be omitted, which will also reduce the number of carbs per serving. Makes 8 servings, about 3/4 cup each.

Notes: Jambalaya is a flexible stew, but almost always includes chicken and the “holy trinity” of southern cooking, but the vegetable and meat choices vary with personal taste. You can add other vegetables such as okra, green beans, cauliflower, carrots or broccoli. The carbs will vary a little based on what you add, but it will be close.

Butternut Cranberry Pudding Is Yummy

I had about 1/2 cup of butternut squash leftover and I wanted to turn it into a dessert, using it like I would pumpkin. I hit on the idea of making a pudding with it and adding cranberries and pecans. It turned out to be a delicious combination and a fairly easy dessert to make.

I’m trying something new this time and giving you both the low carb recipe and the regular recipe that doesn’t use sugar substitute. The food is basic and it’s good, whichever way you make it.

Butternut Cranberry Pudding

Low Carb Ingredients:

1/2 cup Butternut Squash, cubed
2 tablespoons, Cranberries, chopped
2 Eggs
1/4 cup Heavy Cream
2 tablespoons Butter
2 tablespoon Vanilla Whey Protein Powder
2 teaspoons Pumpkin Pie Spice
1/4 cup Pecans, chopped (optional)
1/2 cup Brown Sugar Substitute
1 teaspoon Vanilla Extract
2 to 4 tablespoons Walden Farms Marshmallow Dip (optional)

Preheat oven to 350 degrees F. Prepare 4 1/2 cup soufflé cups by spraying with cooking spray or coating with butter.

Put butternut squash in a microwavable bowl with butter and microwave for about three minutes until the squash is tender. Mash with a fork.

In a medium bowl, put the squash, cranberries, protein powder and spices. Stir together, then add eggs, sugar substitute, heavy cream, and vanilla extract. Stir until thoroughly mixed. Add pecans if you are using them.

Spoon or use a 1/4 cup measure to divide among the four baking cups. Place in a glass pan, then add enough warm water to the pan to come about 1/2 the way up the sides of the baking cups so they are sitting in it. This will help keep the pudding moist while it cooks.

Bake for about 40 minutes until a knife inserted in the middle comes out mostly clean. Top with marshmallow cream if desired and bake another 5 minutes to heat. Let cool a few minutes, then serve warm. Or refrigerate and serve cold with whipped cream.

Makes 4 servings.

Delightful Tostada Salad Features Butternut Squash

Butternut Chicken Tostada

Recently, I ran across a recipe for a taco filling using butternut squash, which is something that I had been thinking about anyway.  It’s similar to adding pumpkin to a recipe or acorn squash, which I think are almost interchangeable.  And they also substitute for sweet potato pretty well.  Add to this that I picked up two tostada molds at the dollar store and I had the inspiration for this Butternut Squash Tostada.    The metal molds are easy to use, just put the tortilla in and press it into the shape.  Put in the oven to toast and you’re done.

Based on a recipe from my local grocery store, Raleys. I made a few adjustments for low carb and added chicken to what was a vegetarian taco.

Butternut Squash Tostada Salad

1/2 cup Onions, chopped
1/2 cup 1/4 -inch cubes Butternut Squash
1/2 cup diced Bell Pepper
1 cup Cooked Chicken, shredded or diced
1 tbsp. Olive Oil
1/4 cup Taco Sauce
4 low carb Flour Tortillas
1 cup shredded Monterey Jack Cheese
Fresh Cilantro leaves, torn
2 cups shredded Lettuce
1 Hass Avocado, cut into slices
4 tablespoons Pico de Gallo or Salsa

Preheat oven to 375 degrees (F.)

Use a tostada mold to make the tortilla shells or turn a muffin pan upside down and arrange the tortillas over the cup and press down to make a well in the tortilla. If the tortilla doesn’t bend easily, heat it over a burner for about 30 seconds until it softens or warm in the microwave for about 20 seconds. Bake the shell for 8- 10 minutes until it is lightly browned. Let cool.

In a large skillet, heat the oil, then add the onions and bell pepper and saute for about 1 minute over medium high heat. Add the squash cubes and the chicken and continue to cook for about 5 minutes. Add the taco sauce, cover the pan, reduce the heat to medium and cook for another 5 minutes. (If the vegetables are getting dry, add a little water to the pan.)

Put lettuce in the bottom of the tortilla shell, then spoon 1/4 of the filling into the shell, making sure to distribute it into the points. Top with shredded cheese and put a slice of avocado on top of each point of the tostada. Spoon the pico de gallo or salsa into the middle. Serve with a low carb chipotle ranch dressing if you like.

TIP: Want to reduce your carbs a little? Omit the tortillas and just eat as a salad. This reduces the meal by 3 net carbs and 60 calories. To make this vegetarian, omit the chicken.
