Avocado and Tuna Salad

Greetings everyone and Happy Memorial Day Weekend!

Since the temperature is beginning to climb in various parts of the world, I thought a tasty salad recipe would be welcome about now. This one uses avocado along with apples, onions, celery, nuts and a tuna to make a delicious combination. You can also use chopped or shredded chicken in place of the tuna.

Tuna Salad with Avocado

1 ripe Haas Avocado
2 (5 ounce) cans or packets of flaked Light Tuna
½ medium Red Apple, chopped
½ cup chopped Red Onion
½ cup chopped Celery
¼ cup chopped toasted Walnuts or Pecans (optional)
2 tablespoons Mayonnaise
1 tablespoon sugar-free Sweet Pickle Juice
1 teaspoon dried Dill Weed (optional)
½ teaspoon Dijon Mustard
¼ teaspoon ground Cumin
Salt and Pepper to taste

Cut the avocado in half and use a spoon to scoop out the flesh into a large bowl. Mash the avocado with the back of a fork.

Add the rest of the ingredients and mix well. Adjust the salt and pepper to your own taste. Put in the refrigerator to chill for at least an hour to three hours. The longer it sits, the more the flavors will merge and increase the flavor.

Use a big scoop on top of lettuce for a tuna salad or put it on a low carb sandwich roll.

Makes about 6 servings.

Thanksgiving is Upon Us

Amazingly, we have arrived at Thanksgiving in the USA. Canada celebrated a month ago. For everyone else, think of it as a prelude to the end of the current season. Here, in Reno, Nevada, our non-evergreen trees have dropped the last of their leaves signaling that Winter is coming. Snow is already on the Sierra Nevada Mountains. I can recall more than one snowy Thanksgiving here, so it could be a possibility.

Hope all of you are well. This has been a particularly tough year for everyone, but we are still surviving and are so thankful for it. For me and the friends I cherish, this is the one thing I am so grateful to say. Our hopes are to have a resolution to the pandemic soon, but until then, to continue to stay safe and healthy.

I don’t have a new recipe for today because I’m scurrying to get everything prepped for Thanksgiving and doing NaNoWriMo (for those who don’t know, that is National Novel Writing Month, so I am writing as many words on a new novel as I can). I will have a recipe on Friday for low carb Pecan Pie. You won’t miss those carbs at all. Trust me.

Easy and tasty Korean Beef Bowl

When you’re looking for something quick and easy to make, especially when it’s warm out and you don’t want to heat up the kitchen too much, try cooking a simple skillet dish.

For a taste of Korean-style food, this easy to make Korean Beef Bowl fits the bill. If you want to make it a little lower in carbohydrates, reduce the soy sauce to 1/4 cup. This reduces it 1 net carb per serving.

Korean Beef Bowl

1 pound lean ground beef
5 cloves garlic, crushed
1 tablespoon freshly grated ginger
2 teaspoons toasted sesame oil
1/2 cup Low-sodium soy sauce
2 tablespoons Swerve Brown Sugar
1/4 teaspoon crushed red pepper
6 Green Onions, chopped, divided
2 stalks Celery, chopped
4 cups riced Cauliflower, cooked
1 tablespoon toasted sesame seeds

Using a large skillet, heat it over medium-high heat until a drop of water sizzles on it. Add ground beef and use the spatula to cut and crumble it into small pieces. Cook until browned, about 7 minutes. Drain any excess grease from the pan.

Stir in the garlic, ginger, and sesame oil and cook for about 2 minutes until you can smell the seasonings. Add the soy sauce, brown sugar, and crushed peppers to the pan and cook about another 7 to 8 minutes until some of the beef absorbs some of the sauce. Add 1/2 of the chopped green onions and stir.

Spoon the beef mixture over the cooked cauliflower rice in 4 dinner bowls. Sprinkle the rest of the chopped onions and sesame seeds over the beef and serve. A crisp cucumber salad – sliced cucumbers, sliced red onions, and a little shredded daikon radish in rice wine vinegar – makes a refreshing side dish.

Makes 4 delicious servings.

Tip: For variety, use a cauliflower-zucchini rice or a cauliflower-broccoli rice instead of plain cauliflower. Also, add a little beef bullion to the rice combination as it cooks. I’ve also used riced turnips as a rice substitute.

Quick to Fix Garlic Cajun-Style Cod

As I move through the heat of August, I am looking for less cooking in the kitchen and more salads. But an easy and quick cook meal I made recently was this spicy and delicious dish of one of the few kinds of fish I enjoy eating.

Cod is a sturdy white fish and takes well to this spicy seasoning. Use any Cajun blend seasoning to rub into the fish before you cook it in a skillet. The Cajun Holy Trinity of cooking includes bell pepper, onion, and celery. Unfortunately, I didn’t have any celery in the house, but feel free to add it to the dish.

Garlic Cajun-Style Cod Fish

2 fillets Cod Fish (about 4 oz. each)
1/2 Bell Pepper, sliced
1/2 Red Onion, sliced
1/4 cup Celery, sliced
4 tablespoons Butter, melted
1 tablespoon Olive Oil
1 clove Garlic, minced
2 teaspoons Cajun Spice mix

In a skillet, add oil and heat. Add onions, and garlic, and sauté for about 2 minutes, then add bell pepper and celery. Stir fry for about 5 minutes until the vegetables are just tender. Remove to a bowl or a plate.

Season cod with Cajun spices. Reduce heat under the skillet to a medium high, then add the cod. Cook about 4 to 5 minutes on each side until the cod is white all the way through. Add vegetables and stir together for about two minutes to warm them up.

Serves 2.

Light and Delicious Chicken and Broccoli Skillet Fry

So, meals these days are pretty much dictated by whatever ingredients you happen to have in the house. Lucky for me, I had scored a large package of chicken breasts in March (actually, the roomie did the scoring), and I have several packets frozen. I also had a pretty good run on vegetables from a market order last week. So this recipe jumped out at me, but I made a couple of small adjustments to what I had, and you can do that also.

If you don’t have fresh broccoli, use frozen. Or you can substitute in Brussels sprouts. I had celery on hand, but it is optional. If you don’t have fresh or frozen chicken but have a couple of cans of it, you can use that also. Just skip the cooking the chicken and go right to heating it up with the broccoli.

This is truly a delicious and simple meal to make. So I think you’re going to love it. Add your favorite rice substitute or zoodles, toss a salad, and you have a great dinner. As a side note, I served mine with riced parsnips, which have a bit of a peppery bite to them, but actually worked well.

Chicken Broccoli Skillet Fry

2 1/2 tablespoons Oil
1 cup Broccoli, chopped
Salt and ground Black Pepper to taste
1 teaspoon Mrs. Dash Southwest Chipotle Seasoning
2 large chicken breasts, cut into 1-inch cubes
4 medium stalks Celery, cleaned and sliced 1/4″ thick
1 teaspoon Garlic, minced
1/2 medium Onion, diced
1/2 Lemon, zested and juiced

Cook the broccoli in the microwave for about 3 minutes to partially cook it. Or put it in boiling water for three minutes. This will reduce the cooking time when it is added to the skillet. Set aside.

In a large skillet over medium-high, heat the oil and add the garlic, celery, and onions. Cook for about 2 minutes. Add the chicken and cook, stirring periodically, until the chicken is mostly cooked. Add the broccoli and stir in. Add the seasonings except for the lemon. Cook until the chicken is done, and the broccoli is tender (or to your preference.) Add the lemon zest and juice and stir it in.

Serve with riced cauliflower, or riced turnips, or with zoodles (zucchini noodles).

Makes 2 to 4 servings depending on your hunger and if you’re having a salad along with it.
