Simple Cheese Bread Rounds

As bread for sandwiches or a snack, these easy-to-make cheese rounds are sturdy enough and quick to make. The recipe came from DCC Carb Counters using their Bakesquick for the small amount of flour they use. Although I haven’t tried any other flour options, I believe any low carb baking mix, or almond or coconut flour will also work. If you use coconut flour, use half the amount and add another egg white.

You can add any number of spices or seeds to the recipe to vary the flavor. Use hard cheeses, such as cheddar or Swiss for at least one of the options.

I used two of these rounds to make a chicken salad sandwich, and they worked beautifully. They cool to a sturdy, but still soft cheese bread round that holds up to the meat, mayo, lettuce, and tomato. I don’t know if it will work with a hamburger, but it might.

Cheese Bread Rounds

1/3 cup Carb Counters™ Bakesquick™
1/4 cup Shredded Sharp Cheddar Cheese
1/4 cup Parmesan or your favorite blend of shredded cheeses
2 Large or Extra Large Egg Whites or 6 tablespoons Liquid Egg Whites
1/2 teaspoon Mrs. Dash Garlic & Herb Seasoning *

Preheat Oven to 350°. Spread a sheet of parchment paper on a cookie sheet or pizza pan (or coat the surface with non-stick cooking spray.)

In a mixing bowl, add all the ingredients and stir until they are blended together. Separate into 6 tablespoon-sized pieces and roll into balls. Place each on your cookie sheet, allowing 4″ between balls.

Use a piece of plastic wrap to press balls down to 4″ wide rounds. A plastic baggie works well to put your fingers in to do this. Bake for 12-15 minutes until they are a light golden brown. Cool on a rack.

Makes 6 flat bun-size rounds.

* You can use any add-ins to enhance the flavor that you like. Suggested seasonings are Italian, dried chives, dried onions, dried dill, and Mexican blend herbs for a spicy flavor. You can also add in sesame seeds or poppy seeds.

Celebrate the Harvest with this Meat-free Quiche

For many years, I’ve made my quiches with ricotta cheese. It adds firmness and texture to the mix so the egg doesn’t seem so much like custard.

This crustless, meatless quiche has plenty of fall vegetables, including a nice serving of mushrooms, to satisfy your hunger. Nearly every plant I used came from my garden in the almost last harvest of the year, and you can find them all in grocery stores now if you don’t have an outdoor source of your own.

I used Bakesquick for my flour to give the quiche a little more body and fill in for the missing crust, but it is optional. The recipe works quite well without it. Likewise, chili spices are optional, but I like a little kick in my food.

Feel free to substitute other vegetables if you don’t like one. Just be aware some vegetables may be a little higher in carbs, but most will come in close to the same amount. Hope you enjoy the recipe.

Harvest Spinach, Zucchini, & Ricotta Quiche

3/4 cup Spinach, fresh and torn (about 2 handfuls)
1 cup Zucchini, sliced
1 1/2 Tomatoes, ripe, 6 slices
1/2 cup Ricotta Cheese, whole milk
2/3 cup Cheddar Jack Cheese, shredded
1/2 cup Irish Cheddar Cheese (Or other sharp cheddar), shredded
4 Eggs, beaten
1/2 cup Whipping Cream
1/2 cup Mushrooms, sliced
3 Mini-Peppers, sliced down the middle
1/4 cup Low Carb Flour (optional)
1 teaspoon Garlic and Herb seasoning
1/2 teaspoon Chili Spices (optional)

Preheat oven to 375 degrees (F.) Prepare a 9-inch deep dish pie plate by spraying with cooking spray.

Slice all the vegetables and set aside.

In a large bowl, add the ricotta cheese, the beaten eggs, and seasonings and whisk together until well mixed. Stir in the low carb flour if you are using it and mix until smooth. Set aside.

Line the bottom of the pie dish with sliced zucchini. This should make a fairly solid base for the pie. Top with mushrooms and spread them evenly. Put the torn spinach over the top and press it down a little.

Pour the egg mixture over the top, using a spoon to spread it evenly over the spinach. Place a slice of tomato at equal intervals around the edge to mark each slice. Place one-half chili between each tomato slice.

Bake for 45 to 50 minutes until the pie is set and a toothpick inserted in the middle comes out mostly clean. Let sit about 10 minutes before serving.

Makes six servings.

Tasty BBQ Chicken Biscuit Rolls

Want a low carb variation of the BBQ Chicken that tastes great and is pretty easy to do? To make these, I used Carbquick from Tova Foods. You could also use Bakesquick from Dixie Carb Counters. If you use other flours, they may not hold together as well and you’ll need to add butter and baking powder. This uses precooked rotisserie chicken, which makes it a great way to use any extra chicken.

You can order either Carbquick or Bakesquick from Netrition.com or from Amazon. It may be a little higher from Amazon, but if you have Prime, you may save on the shipping.

BBQ Chicken Biscuit Rolls

2 cups CarbQuick
1/4 cup Water
1 teaspoon Garlic and Herb Seasoning
1/2 cup G. Hughes Sugar-free BBQ sauce
1 1/2 cups shredded rotisserie chicken
1/3 cup Onion, finely chopped
1 cup shredded cheese
1/4 cup parsley, chopped

Preheat oven to 425 degrees (F.) Prepare a baking pan with either a silicone mat or parchment paper.

Mix the Carbquick in a large bowl with about 1/4 cup of water. Add enough that it pulls together into a ball, but don’t get it too moist. It will roll out better if it is a stiff dough. Form the dough into a 5-inch x 3-inch log, then put in on a silicone mat or wax paper covered board. Place a sheet of wax paper over the top and press it into a rectangular shape. Use a rolling pin to roll it out to about 10 inches long by 6 or so inches wide.

Put BBQ sauce in a cup and use a basting brush to spread about half of it over the top of the biscuit dough. Add the rest to the diced or shredded chicken. Spread the chicken evenly over the dough, allowing a slight edge on each side for rolling the dough. Top with chopped onions, cheese, and sprinkle on the parsley.

Roll the dough on the long side to form a roll-up. The dough may break in places, so pat it back together as you go. If it becomes difficult to roll, then pull the other side to meet the rolled side and press together to seal. Cut the roll into 8 slices.

Place slices flat with the filling up on the prepared baking sheet. Bake for 15 to 18 minutes until they are golden brown and the cheese is melted.

Let cool about 5 minutes, then serve with a poblano ranch dressing or more BBQ sauce. Makes 4 servings of two rolls each.

Broccoli Bacon Bites appetizer for any party

Recently, this recipe came around on my Facebook feed as one of those tasty, simple-to-make appetizers that work well for a party. The original recipe said to fry them in fryer– you can do that if you’d like, but I wanted mine to be a little lighter and without the extra oil flavor, so I decided to bake them.

To make this low carb required only one change, swapping out regular flour for low carb flour. In my case, I used Bakesquick, but you can use whichever one you prefer, such as almond flour or CarbQuick.

While I simply dropped my batter on a parchment paper, you can also put these in mini cupcake pans with papers so they retain a more compact shape. This is a versatile recipe and you can easily swap in cauliflower for the broccoli, add peppers, or other spices to it to personalize your bites.

Broccoli Bacon Bites

1/2 cup Bacon, chopped
3 cups Broccoli, chopped (or Cauliflower)
1 teaspoon Salt
1/4 cup Water
4 Eggs
1 teaspoon Pepper
2 cups Cheddar Cheese, shredded
1/4 cup Green Onions, chopped
1/2 cup Low Carb Flour

Preheat oven to 375 degrees (F.) Prepare a baking pan with parchment and spray with oil.

Put broccoli in a microwaveable bowl, add salt and water. Microwave for 3 minutes until almost tender. Drain.

In a bowl, put all the ingredients and mix together well. Use a small scoop to form balls and place each on the parchment-covered baking pan.

Cook for 15 to 18 minutes until golden brown.

Remove to serving plate and put out a bowl of Ranch Dressing for a dipper.

Makes 40 to 45 bites. (I got 42, but some were quite a bit larger than the rest.)

Need a Substitute for Garlic Bread?

Here’s a nice twist on a waffle to make a delicious toast to go with your savory dinner. It’s especially nice if you have anything with a sauce so you can soak up the goodness. It’s also great with chicken, pork, steak, or soups and stews. You can use buttermilk and a bit of cornmeal for extra flavor if you wish, but they do add a few carbs to each serving. The flax meal helps to bring some of the cornmeal texture and a nutty flavor, so the waffle is quite tasty without the added ingredients.

For a low carb flour, you can use almond flour, soy flour, coconut flour, or any low carb flour mix such as Bakesquick or Carbquick. If you use coconut flour, use 3 tablespoons instead of 1/3 cup low carb flour and add 1/4 cup egg whites.

Garlic Cheese Waffle

1/3 cup Low Carb Flour
2 tablespoons Golden Flax meal, ground
1 tablespoon Yellow Cornmeal (optional)
1 Egg, fresh
1/4 teaspoon Baking Powder
1/4 teaspoon Garlic powder
1 tablespoon Olive Oil
1 tablespoon Grated Parmesan & Romano Cheese
1 tablespoon Buttermilk(optional)
1 tablespoon Butter
1/4 cup shredded Mozzarella or Cheddar Cheese

Preheat your waffle iron while preparing the mix.

In a medium bowl, add low carb flour, Flax meal, egg, oil, Parmesan cheese, baking powder, and garlic powder and mix together until blended. Add buttermilk and stir it in. If the batter is too thick, thin with a little water. This should spread easily but not too quickly over the waffle iron grids.

Pour batter over the bottom plate of the waffle iron, close lid and cook the recommended time for your waffle maker. Mine takes about two minutes to cook. Watch the waffle iron for the steam coming out and when it is almost gone, try to lift the lid. If it resists, cook the waffle a little longer. Once it is done, the top will open easily.

Spread butter over the top and sprinkle mozzarella or cheddar cheese on top, then put under the broiler for about a minute to melt the cheese.

Delicious with any savory meal but especially good with Italian-style meals.
