Garlic Honey Chicken made easy!

Looking for a simple but delicious dinner? This one fits the bill. It comes together quickly and doesn’t take long to bake in the oven. Even though you need to use an imitation sugar-free honey, it does bring the flavor and keeps the carbs down. Most of the sugar-free honey brands come to 1 net carb per tablespoon, so that’s what I used for the nutrition calculations.

I served mine with a side of steamed Brussels sprouts and butternut rotini. A nice salad would go well with it, as would broccoli or green beans.

Garlic Honey Chicken

2 tablespoons butter
1 tablespoon garlic powder
1-1/4 teaspoons dried rosemary or 1 sprig of fresh rosemary
1 pinch salt and ground black pepper to taste
1/3 cup honey
4 4-5 oz. skinless chicken breasts or thighs

Preheat oven to 375 degrees F.

In a saucepan, melt the butter over medium heat. Mix in garlic powder, rosemary, salt, and pepper.

Cook for 1 minute. Stir in honey and bring sauce to a boil. Turn the heat to a low simmer. Dip each chicken breast into the sauce, coating it completely, then place in a baking pan or an oven-safe skillet. Spoon the remaining honey over the tops.

Bake about 30 to 40 minutes, depending on thickness. An instant-read thermometer inserted in the thickest part should show 165 degrees F. Remove from oven; Use tongs or a fork to turn each piece over to coat it in the sauce on the bottom. If you want to get more color on the chicken, put it under the broiler for 3 to 4 minutes.

Makes 2-4 servings.

Easy Chicken with Mushrooms dish

So easy you can make it on a busy night!

This simple dish is one of my throw-together combinations. Let’s see, I have chicken, mushrooms, and spinach. What can I do with that? Well, this is one delicious option. Simple, yet completely satisfying.

For a side dish, I added cut-up turnips and kohlrabi, cooked in the microwave until fork tender, then added butter and seasoning salt. Yummy. The fresher the turnip or kohlrabi, the sweeter the taste. If they sit too long in the ‘fridge, they will get tough and a bit bitter.

Creamy Chicken with Mushrooms & Spinach

2 large Chicken Breasts
1/2 cup Mushrooms, sliced
1/2 cup Cream
1 oz. Cream cheese
1 teaspoon Mustard
1 cup fresh Spinach
1/2 teaspoon Cumin
2 tablespoons Butter

Cut chicken breasts into several pieces about the same size for even cooking.

In a large skillet, add 1 tablespoon of butter and let it melt. Add the chicken and brown on both sides over medium heat. Chicken pieces should be cooked most of the way through. Remove chicken to a paper towel or plate.

Add mushrooms to the pan and sauté until brown, then add cream cheese, cream, mustard, and cumin and stir. Continue to stir until the sauce begins to thicken. Tear and add spinach and stir in. Return chicken to the pan and add rest of the butter. Cook for another five minutes until chicken is done.

Makes 4 servings.

Variation on a theme: Artichoke & Bacon Chicken Alfredo

Last week, I posted a recipe for the pizza version of Artichoke and Bacon with Chicken. But this is also a great dish when made in a skillet without the pizza crust. It’s easy to make and can be made in one pan, or one skillet and a baking pan.  This one has gone into our make frequently file.  Trust me, it’s that good. My recipe.

Artichoke, Bacon & Spinach Chicken Alfredo

2 skinless Chicken Breasts (about 12 to 16 oz)
2 slices Thick Sliced Bacon, cooked and broken into pieces.
1/2 cup Artichoke Hearts
1/4 cup fresh Spinach leaves
1/4 cup Ricotta Cheese, whole milk
1 cup Mozzarella Cheese, whole milk, shredded
1/2 cup  Vodka Pasta Sauce or other low carb Alfredo Sauce
1/4 teaspoon Seasoning Salt
1/4 teaspoon ground Black Pepper
1 tablespoon Parmesan Cheese, grated
1 tablespoon Olive Oil

Preheat oven to 365 degrees (F.).

Generously sprinkle the chicken breaks with seasoning salt and pepper. Cut the chicken breasts across the meat part way through without going all the way through to leave four pockets along the length. This is similar to Hasselback chicken.

Take one or two spinach leaves and add 1/2 tablespoon ricotta cheese in the middle, then fold and put into one of the cuts in the chicken. Repeat seven times, placing one spinach packet in each of your cuts. Divide the bacon into eight groups and stuff into each of the cuts.

The chicken before the sauce and cheese are added to the pan. You can just see the ricotta and spinach leaves peeking out from the slits.

In a skillet that can go into the oven, such as a cast iron one, add one tablespoon Olive oil and place each breast in the pan and brown slightly on the bottom, about three minutes. Distribute cut up artichoke hearts over the chicken and sprinkle with Parmesan Cheese. Spoon the Alfredo sauce over the top, spreading it smoothly over the chicken, then sprinkle the mozzarella cheese on top.

Bake for 30 to 35 minutes until the cheese is melted and lightly browned. Remove, let cool about five minutes to allow the cheese to set, then serve.
