An Easy and Delicious Casserole

Hello all… Autumn is on its way, but summer is still in full force,
Although the last few days here in Reno have felt like November. But it will get hot again soon. I had planned to publish a recipe earlier this month, but the heat was muggy. I found it easiest to just grab a fast-food salad for dinner.
But a friend gifted us several beautiful yellow squashes. They were pretty large and very flavorful, so one-half of one big one was enough for this really delicious casserole. Made with a low carb bread–I used Timberwolf, but any 1 Net carb per slice bread will work–it is more like a strata than a crust base. See this post for other bread options:
It will make four hearty portions or six smaller ones that are great when rounded out with a salad.

Southwestern Squash and Chile Bake

Ingredients
1 tbsp olive oil or butter
1 small red onion, thinly sliced
2 cloves garlic, minced
1 yellow squash, halved and thinly sliced
1–2 green chiles, chopped (adjust for heat)
½ lb sausage or ground turkey (browned)
½ cup bacon pieces (optional, for smoky depth)
2–3 slices low-carb bread, cubed
6 eggs
¼ cup milk or cream
Salt, pepper, cumin, smoked paprika
Optional: shredded cheese (cheddar or pepper jack)
 Instructions:
1.     Preheat oven to 375°F (190°C). Grease a baking dish.
2.     Sauté aromatics: In a skillet, heat oil and cook red onion until soft. Add garlic, squash, and green chiles. Sauté until squash is tender.
3.     Layer the base: Spread cubed bread in the baking dish. Top with sautéed veggies, cooked sausage or turkey, and bacon bits.
4.     Whisk eggs with milk, salt, pepper, cumin, and paprika. Pour over the layered ingredients.
5.     Top with cheese if using. Let sit for 5–10 minutes so bread absorbs the egg mixture.
6.     Bake for 30–35 minutes until set and golden. Let cool slightly before slicing.

About that Salmon Salad

Heavy winds and rain are blasting my area as we approach the end of March. (I think it came in like a lion, but not sure it will depart like a lamb.) We can only hope April looks more like spring than March has. When the month started, I promised to post the recipe for a great salmon salad. Then it totally slipped my mind as I started getting more of the St. Patrick’s Day recipes up. But here it is. This works great if you have left-over salmon, or you can grill a piece before you make it. You can also use canned or packaged cooked salmon.

This is another yummy recipe from Paleo Leap’s web site, so it is good for Atkins, South Beach, Keto, and Paleo.

1 cup Salmon, grilled and flaked (8 oz)
1 hard boiled Egg, diced
1 Mini Pepper
1/2 Avocado, diced
2 slices Bacon, cooked and broken into pieces
1/4 Onion, minced
2 tablespoons Mayonnaise (homemade or your preference)
1 pinch Cayenne Pepper
1/2 teaspoon Lemon Juice
1 tablespoon fresh Parsley, minced or 1/2 teaspoon dried Parsley
2 tbsp. Olive Oil
1 drop liquid Sweetener
Sea salt and freshly ground black pepper
2 cups of fresh greens (Spring mix lettuce, spinach, arugula – your choice)

To make the dressing:

In a bowl, add the mayonnaise, parsley, lemon juice, cayenne, sweetener, and olive oil then whisk until it is blended.

In a medium-sized mixing bowl, combine the salmon, diced eggs, bell pepper, avocado, and red onion. Add the mayonnaise mixture and toss it together gently. Cover with plastic wrap and refrigerate until ready to serve.

Divide the greens into two bowls, then top with half the salmon mixture into each bowl. Serve.

Makes two healthy servings.

TIP: If you’d rather have shell fish, make this with shrimp, crab, or lobster instead of salmon. It will work just as well.

Tastes of the Season: Crustless Brussels Sprouts Pie

Depending on how you feel about baby cabbages, as we tend to call Brussels sprouts around our house, this could be a great recipe or one to avoid. I will mention here that you can substitute other vegetables, such as broccoli, cauliflower, and kohlrabi, for the sprouts and it will make a very taste quiche.

I served this with prime rib for Christmas dinner and it was a hit with even someone who wasn’t that crazy about Brussels sprouts. So, for the adventurous, here’s a different side dish for the holidays or any time. This is based mostly on a recipe I got from 12Tomatoes.com and adapted a little bit. I eliminated the crust since most of the carbs are in it, which leaves a much lower carb’d dish. I also added a little ricotta to tone down the eggs and add more texture.

My Christmas dunner with prime rib, cranberry sauce, Brussels sprout pie, creamed cauliflower, and Harvard beets; all low-carb.

Crustless Brussels Sprouts Quiche

2 cups of Brussels Sprouts, trimmed and outer leaves removed
1 cups Heavy Cream or half-and-half
1 cup Gruyere or Swiss cheese, grated
2 Eggs
2 tablespoons Ricotta Cheese
1/8 teaspoon Nutmeg
Salt and freshly ground Pepper, to taste

Preheat oven to 375 degrees (F.) Coat a pie plate with butter or cooking spray.

Bring a pot of salted water to a boil and cook Brussels sprouts for about five minutes until fork tender.

Arrange the sprouts in the bottom of the pie plate, standing them on end if possible. I used frozen sprouts and they refused to stand up. Sprinkle the grated cheese over the top.

In a medium bowl, add eggs, cream, ricotta cheese, and seasonings. Whisk together until blended, then pour carefully over the sprouts.

Bake for 25 to 30 minutes until golden brown. Remove from the oven and cool a few minutes before servings. It will deflate some.

Makes 6 to 8 servings depending on appetite.
