Use Prepared Mix to Make a Fiesta Scramble Breakfast Bowl

I noticed this newish product in my grocery store among the prepared salad ingredients and bowls of cut fruit. I’d seen Mann’s Nourish Bowls on their web site when I was checking on what other prepared fresh vegetables they had. The Nourish Bowls are a complete meal for one that you may have to add an ingredient or two to complete. In this case, this was the Breakfast Fiesta Scramble bowl.

According to the instructions on the package, you just add two beaten eggs, pour in the included packet of sauce with chicken chorizo, and put it in your microwave for two or three minutes to cook. Add the small package of grated cheese on top and viola! You have breakfast. Well, I couldn’t let it sit at that since I prefer cooking my eggs in a skillet — not that I haven’t used the microwave. But in this case, I think all the fresh ingredients gained from cooking on the stove top. I did add a little extra cheese as the package has maybe a quarter of a cup. I also added two more eggs to make a total of four to serve two people. Honestly, they’ve packed enough veggies into this bowl to easily feed two and possibly three people unless you’re super hungry.

What kind of veggies, you may be asking? Good, low-carb ones. It includes cauliflower, kohlrabi, butternut squash, and kale. The packet also includes the sauce with chicken chorizo, (trust me, not a lot of it. In fact, I couldn’t really distinguish it in the sauce) and the packet of cheddar-jack cheese. You could make your own mix by chopping up equal parts of the same vegetables, but this is really convenient.

So, below are the directions to make the basic Fiesta Scramble Bowl using four eggs to serve two people. Below that are two possible variations to add more meat and flavor to the basic bowl. To be frank, I think there’s enough for two servings easily, and it wouldn’t be hard to eke out a third serving, which in turn keeps the carbs lower.

After this recipe, I’ve added two possible variations on the basic recipe that will bring more and different flavors to the bowls.

Fiesta Scramble Bowl

1 package Mann’s Nourish Bowls Breakfast Fiesta Scramble
4 Eggs
1 tablespoon Butter

Add butter to a large skillet and melt. Stir in the vegetables from the Fiesta Scramble package and stir fry for about 5 minutes to soften the veggies. Check to make sure that the butternut cubes are almost tender. If not, stir fry a little longer.

In the meantime, break four eggs and add pepper then whisk in preparation.

When the veggies are softened, add the packet of sauce with the chorizo chicken in it. Stir it in well and rinse the package in about two tablespoons of water, then add it to the skillet. Stir until the sauce is mixed evenly.

Add the whisked eggs and stir to scramble them into the veggies. Cook and stir until the eggs are firm. Remove from heat and sprinkle cheese on top.

Makes two servings.

Variation #1 – Mexican Fiesta Bowl

1 package Mann’s Nourish Bowls Breakfast Fiesta Scramble
4 Eggs
1 tablespoon Butter
1 Chorizo sausage
1/2 teaspoon Cayenne Pepper
1/4 cup Onions, chopped
1/4 cup Cheddar Jack Cheese

In a large skillet, add the ground chorizo sausage or cut the sausage into thin slices and put in the pan. Cook and stir for a few minutes to get the chorizo done. Remove to a plate while you add the chopped onions and saute them for a couple of minutes, then add the vegetables from the Nourish Bowl packet. Cook and stir for about 5 to 8 minutes to mostly cook the veggies.

Add the chorizo back to the pan, then add the sauce from the kit. Stir to combine with the vegetables. rinse the package in about two tablespoons of water, then add it to the skillet. Stir until the sauce is mixed evenly.

Add the whisked eggs and stir to scramble them into the veggies. Cook and stir until the eggs are firm. Remove from heat and sprinkle cheese on top.

Makes two to three servings.

Variation #2 – Italian Breakfast Bowl

1 package Mann’s Nourish Bowls Breakfast Fiesta Scramble
4 Eggs
1 tablespoon Butter
1/2 teaspoon Italian Seasoning
1/2 cup Tomatoes, diced
3 slices Bacon, cooked & broken into pieces
1/3 cup Mozzarella Cheese

Don’t use the cheese included in the kit.

Cook the bacon and break it into pieces. Cut up the tomato into small cubes.

Add butter to a large skillet and melt. Stir in the vegetables from the Fiesta Scramble package and stir fry for about 5 to 8 minutes to soften the veggies. Check to make sure that the butternut cubes are almost tender. If not, stir fry a little longer.

White Pizza for a change of pace

Every once in a while, a body wants a packed-with-goodness pizza. That’s not always easy to do when you’re watching your carbohydrates. But it’s not impossible. You can use a couple of substitutes for the pizza crust that are pretty good, like chicken, portobello mushrooms, sliced eggplant, low carb tortillas, and this one I used for this recipe, a cauliflower pizza. Now, if you don’t like cauliflower, then choose one of the other options and just follow the toppings part of the recipe.

I made a vegetable-packed white sauce pizza. In this case the white sauce is simply an Alfredo pasta sauce. I used Classico because it is pretty low in carbs, but there are others that are also good for it. Check the jar and if it is around 3 net carbs per 1/4 cup, you’re in the ballpark. The taste of this is really great and the vegetables can be pretty flexible to what you like on it. Want it completely vegetarian, leave off the chicken and bacon, but it will have cheese. I’ve listed the carb counts for the crust separate from the toppings and the total combined as well. The crust is good for any pizza you’d like to make.

White Sauce Vegetable and Chicken Pizza

For the Pizza Cauliflower Crust
2 1/2 cups Cauliflower, grated
1/2 cup Parmesan Cheese, grated
1 Egg, slightly beaten
1/2 teaspoon Ground Oregano
1/2 teaspoon Garlic Powder
1/2 teaspoon Dried Basil

For the Toppings:
1/2 cup Brussels sprouts, sliced or shredded
1/2 cup Mushrooms, pieces or slices
1/2 cup Kale, chopped or torn
1/2 cup Spinach, chopped or torn
3 tablespoons Bell Peppers, chopped
1/4 cup Onions, chopped
1 1/4 cup Mozzarella Cheese, shredded
2 tablespoons Parmesan Cheese, shredded
1 cup Alfredo sauce (Classico)
1 cup Chicken Breast, cooked and sliced or shredded
2 slices Thick Bacon, cooked and crumbled

Preheat oven to 425 degrees (F.)

Crust:

Put your raw cauliflower in the food processor and pulse until it resembles rice or couscous. Or you can grate it by hand with a food grater. Put the grated cauliflower on a clean towel (flour sack towers are great for this), fold the towel over the cauliflower and squeeze to get as much water as possible out of the vegetable.

Put the dried cauliflower in a bowl and add the parmesan cheese, oregano, garlic powder, and dried basil. Mix in the egg, a dash of salt, and stir until completely blended. You can form it into ball at this point.

Put a sheet of parchment paper over a round stone or on a baking sheet. I used a baking pan lined with foil and it also works. Spray the foil with baking spray before you put the cauliflower in it. Shape the cauliflower dough into round pizza or a rectangle. Press it firmly together.

Bake for about 20 minutes until the crust is a golden brown. Pull it out and let it rest about five minutes, then add your toppings.

Vegetable Pizza

Prepare all the vegetables while the crust is cooking. Only the chicken and bacon are pre-cooked, although you can parboil the Brussels sprouts if you cut them in slices so that they aren’t too crunchy. Put them in a pan of boiling water for three minutes, then rinse in cold water and drain. OR put them in a bowl in the microwave for three minutes then drain.

Spread half of the Mozzarella cheese over the crust, then spread the Alfredo sauce over the top of that. Distribute the chicken and vegetables evenly over the crust and top with the bacon pieces. Sprinkle the rest of the mozzarella over the top and bake for 15 minutes until the cheese is melted and lightly browned.

Cut and serve. Makes 4 servings.

Spicy Stuffed Chicken Breasts

This recipe came through a Facebook post that originated from Budget101’s blog, who in turn got it from the Maine Cookbook. I wanted to adjust it just slightly for low carb, and really, the main adjustment was to eliminate the breadcrumbs. But, having watched Emeril for so many years, I needed to kick it up a notch, so I changed the spinach to a spinach and kale combination and added bacon bits. You can’t go wrong with bacon. If you don’t like spinach, but do like kale, then make the filling all kale and vice versa. Want to kick this up a little more? Add 2 or 3 tablespoons diced green chiles to the filling.

If you can’t find pepper jack cheese where you live, look for a semi -hard white cheese with pepper in it or you can add chile peppers to it.

Incidentally, for the curious, the vegetable in the picture is celery root, diced and boiled until fork tender, then pan fried in a little coconut oil until lightly browned. I put a little jack cheese on top.  The green veggie comes from a local grocery store and is broccoli salad.

Spicy Chicken Stuffed with JackCheese and Greens

6 boneless, skinless half chicken breasts (6 oz. each)
4 oz pepper jack cheese, shredded
2 cups fresh Spinach, chopped
1 cup fresh Kale, chopped
2 tbsp Olive Oil
1/4 cup Bacon Bits
1 teaspoon Cajun Seasoning or other spice
Salt
Black Pepper

Toothpicks, soaked in water

Preheat oven to 350 degrees (F.)  Prepare a baking pan with foil or with parchment paper. Spray with cooking spray.

In a skillet, heat1 tablespoon olive oil, then add chopped spinach and kale. Sauté until they are wilted but not limp. Add bacon bits to the pan and mix it together, but don’t cook anymore. Set aside.

Cut chicken breasts down the middle but not all the way through to make a pocket or butterfly. If they are thicker than 1/4″, pound them with a meat mallet or put plastic wrap over the top and use a rolling pin to flatten. If you don’t do this, the breast may take longer to cook.

In the pocket of the breast or the middle, add jack cheese, then spread the spinach mixture on top. Do not overstuff them. Fold the chicken over the stuffing and secure with toothpicks. Tuck the end of the chicken in and secure it.

Place the chicken, seam side up on the pan and brush with olive oil. Sprinkle the Cajun seasonings, salt and pepper on top. If you have leftover spinach, hold it until the chicken is almost done. Bake the chicken for 40 minutes until the juices run clear. Put the additional spinach on top and add any leftover jack cheese, if you wish. Return chicken to the oven for another five minutes to melt the cheese.
