Celebrate with a Chorizo Frittata

With Cinco de Mayo–a really good day to celebrate all things Mexican–just around the corner, so to speak, I thought it would be a good time to try a couple of new Mexican food recipes. Although I’m not sure this frittata would be classified as Mexican, it does have all the flavors of the culture. In Spain or Portugal, this would be called a Chorizo Tortilla, but not so much in Mexico where the tortilla is a thin flatbread versus an egg frittata.

The base recipe for this came from Atkins, but I changed quite a bit about it and I think it’s safe to say it’s my adaptation. I added turnips into it although you can also use potatoes. To keep the carbs low, stick with turnips. If you have lots of carbs to play with, then go with potatoes. You could also substitute in thinly sliced zucchini, Mexican variety of course. (They’re a little more rounded than the normal type.)

Chorizo and Chiles Frittata

1/2 lb. Chorizo sausage, Basque-style
1 medium Turnip, sliced thinly
4 large Eggs
1/4 medium Onion, chopped
4 oz. can Green Chiles, chopped
1 tablespoon Jalapeno pepper, chopped
1 small Tomato, diced or chopped
1/2 teaspoon Seasoning Salt
1/4 teaspoon Black Pepper
1 cup Cheddar Jack Cheese or Mexican Cheese Combo mix
1/2 teaspoon Red Pepper (optional)
1 tablespoon Butter

Peel and slice the turnip or potato into thin slices. Bring a pan of water to a boil and cook for about three to five minutes until the slices are fork tender. This may vary depending on how thick the slices are. OR put the slices into a bowl, cover with a plate and put in the microwave for 2 minutes. Drain off any water and set aside.

Break the eggs into a bowl, whisk until mixed and slightly frothy, add the seasonings, chiles, and tomatoes. Add 1/2 cup of cheese. Set aside.

In a medium-sized cast iron or other oven-safe, deep skillet, add a little oil and sauté the onions until they are just slightly cooked. Remove to a plate. Lower the heat to medium-high.

Add the chorizo broken into small pieces or thin slices and cook until all pieces are seared. Remove the chorizo from the pan. Add butter and let it melt, then add layer the turnip slices over the bottom of the pan and cook for a couple of minutes until they begin to brown, then turn them over. Cook another minute or so, then add the chorizo on top of the turnips.

Stir the egg mixture and pour over the top of the chorizo and turnips. Let cook for about four to six minutes, lifting the sides of the bottom with a spatula occasionally.

Turn on the broiler. Be sure to use a potholder when picking up the skillet. Place the skillet under the broiler and cook for three minutes. Pull the pan out carefully and sprinkle the remaining cheese over the top. Return to the broiler for another two minutes to melt the cheese.

Remove to a heat safe surface and let the frittata set for about five minutes before cutting. Serve with sour cream and/or guacamole if desired.

Makes four servings.

Light and easy, Mexican-style flan dessert

I hope everyone had a great holiday and we’re all ready to settle back into a low carb routine. I know I need to do it.  Too many holiday goodies in this girl’s life and I definitely must drop some pounds.  How about you?

I tapered off on posts a little towards the end of the year in 2016, but I’m aiming to get back on a weekly schedule this year. On New Year’s Eve, I went with my Mexican food tradition and put together turkey enchiladas for dinner. For dessert, I wanted something light that would compliment the main course and not be too heavy. What better than a Mexican flan?

Flan is very much like a panna cotta and is very easy to make.  This one has a light orange flavor from adding grated orange rind, but I took it a step further and put slices of orange dipped in sugar substitute on the top. Give it a try and you might count it among your favorite desserts.  I do.

The only drawback is that this makes a very small serving, but it’s rich enough to satisfy. If you have the carbs to spare, you can make it into two servings instead of four.

Orange Mexican-Style Flan

1 tablespoons Brown Sugar Splenda
1 tablespoon Sugar Substitute
1 tablespoon Butter

2 Eggs
3/4 cup Cream
1/4 cup Water
2 1/2 tablespoons Sugar Substitute
1/2 teaspoon Vanilla
1 teaspoon Ground Cinnamon
1/3 teaspoon Orange Zest

8 segments Orange for garnish (optional)
1 tablespoon Almond slivers (optional)

Heat oven to 325 degrees (F.) Butter four 1/2 cup custard dishes or four cupcake molds. Heat water to boiling in a pot.

In a microwavable bowl, put the brown sugar, and 1/2 tablespoon butter, and cook for 20 seconds. It probably won’t melt much. Add 1/2 teaspoon of hot water and stir. Spoon into the bottom of the custard dishes. You could also use a caramel-flavored sugar-free syrup instead of the brown sugar Splenda.

In a blender, add the eggs, cream, water, sugar substitute, vanilla, cinnamon, and orange zest and blend until smooth. Pour equal amounts of the mixture into each custard dish.

Put the custard dishes In a roasting pan or other large pan and place in the middle of the oven, then pour hot water into the roasting pan to about 1 inch up the sides of the custard dishes. Be careful to not get water in the custard dishes.

Bake for 40 to 50 minutes until a toothpick inserted in the middle comes out clean. Let cool on a wire rack. Spray cooking spray on plastic wrap and   sprayed side down, cover each of the dishes, then chill in the refrigerator for 30 minutes.

Garnish with slices of oranges dipped in sugar substitute and/or toasted almonds before serving,

Makes four servings.

Quick Beef Enchilada Casserole

Enchiladas are spicy and very tasty and are a part of my childhood onward.  I love the many varieties, but sometimes I don’t have time or the patience to make the rolled ones.  The easiest way to make enchiladas is into a casserole rather than rolling each one individually. It doesn’t come out as pretty, but it tastes as good. This low carb version uses low carb flour tortillas (3 nc each) that are not pre-fried briefly in oil, although you could do that if you would like to add a fried bread flavor to the dish.

1 lb Ground Beef
3/4 cup Onion, chopped
4 Low Carb Tortillas (6″)
4 oz. can Green Chiles, chopped
10 oz. can Red Enchilada Sauce
2 teaspoons Taco Seasoning
1 teaspoon red Chile Powder
1 cups shredded Cheddar Jack or 4 Cheese Mexican Cheese
1 tablespoon Butter

Preheat oven to 350 degrees (F.)

Prepare a casserole dish by spraying with cooking spray or rubbing oil on the bottom and sides.

In a large skillet, lightly brown the ground beef, breaking it into small pieces. Drain any fat off. Add the Taco Seasoning and 2 tablespoons of water and mix into the ground meat until it is blended. Remove the meat to a bowl. Add 1 tablespoon of butter to the skillet and sauté the onions until they are tender. Mix the meat into the onions. (If you wish, you can sauté the onions first, then add the ground beef and cook it all together, then stir in the seasoning mix.)

Put the enchilada sauce in a small pan and add the Chile Powder to it to give it a little more flavor and cook for a few minutes.

Pour about 2 oz. of sauce on the bottom of the casserole pan, then place a tortilla on top. Spread another 2 oz. of sauce on top of the tortilla, then put 1/3rd of the ground beef mixture on top, then put 1/4 of the cheese on top of that. Add the next tortilla and repeat with sauce, beef and cheese, then add the third tortilla and repeat again. For the top level, put the last tortilla on, top with remaining sauce and cheese.

Bake for 30 to 40 minutes, until the cheese it melted and just toasted on top.  Serve with sour cream and a green salad or Spanish Cauli-rice or Roasted Cauliflower topped with turmeric.

Makes 6 servings.

Spicy Breakfast Eggs to Start the New Year

I wanted to squeeze one more recipe in before the start of 2014 and this one for Mexicali Baked Eggs is a great way to start off New Year’s morning. I love it when I read a recipe and it inspires me to come up with a new take on it. This is my variation of a recipe posted by Chef John on All Recipes.com His original recipe used Marinara sauce and was more Italian. If you’d like to try that, go to his recipe (and a video) for it. For the south of the border version, mine is right below.

Mexicali Baked Eggs

1/4 cup Green or Red Enchilada Sauce
2 ounces Mexican Chorizo
1/2 teaspoon Crushed Dried Peppers (optional)
1/2 low carb Tortilla, torn into pieces
1/8 teaspoon ground Cumin
Sprinkle of Mexican Oregano
1/2 teaspoon dried Cilantro (or 1 teaspoon fresh, cut)
2 tablespoon Queso Fresco, (Mexican white cheese) crumbled
2 tablespoon Cheddar Jack Cheese, shredded
2 Eggs
2 tablespoons of Heavy Cream
Salt and Pepper

Preheat oven to 400 degrees F.

In a small oven-proof baking dish or two single serving casseroles, spray the bottom with cooking spray, then tear the tortilla and layer the pieces on the bottom of the dish, (Split all ingredients if you are making in two small dishes.) Spoon the enchilada sauce over the tortillas, then sprinkle peppers and cumin on top.

In a small skillet, cook the chorizo until the sauce is melted. Separate into two mounds. Put each mound into the dish to form the base for the eggs. If using a single dish, space these at least three inches apart. Using the back of the spoon, make a well in the middle of the chorizo. Sprinkle a little cheese over the top.

I used a single serving dish to make mine using a green sauce.

Break an egg into a recipe bowl or small bowl being careful not to break the yolk. Carefully slide the egg into the well. It will probably overflow a little. Repeat with the second egg and slide it into the second well. Sprinkle oregano and cilantro, salt and pepper on top of the egg, then sprinkle the crumbled cheese over the top. Top with shredded cheddar jack cheese. Drizzle 1 tablespoon of heavy cream over the top.

You can’t always convince the egg to stay in the well.  I make mine with 1 egg, but feel free to add a second one.

Put the dish(es) on a baking pan and slide into the oven. Bake for about 12 to 14 minutes until the egg is set but still slightly runny in the middle, about like a soft boiled egg.

Remove and serve. Beak up the egg and mix it into the sauce and cheese to really mix the flavors.

To make this for more than a couple of people, you can easily double the recipe and use a larger baking dish.

Rene’s Chicken Chile Rellano Casserole

Maybe a bit oddly, this 4th of July I went for some comfort food from my formative years. Not your ordinary comfort food, but the kind of food that I relate to home and family. In this case, it is a Mexican dish, with my own twist, that brings back many fond memories from my childhood. I was born and raised in El Paso, Texas, and Mexican food was as common as steak and potatoes in my family. (Both of my mother’s parents had been Texas ranchers.) At least once a month, and often more than that, the whole family would go out to dinner at one of the local Mexican restaurants. My grandfather’s favorite dish, and the one he ordered all the time, was chile rellanos. I didn’t develop a taste for them until I was in my teen years, but the memories of my grandfather are always associated with this dish. And that, to me, is comfort food.

This recipe is my one I have developed over the years and can be made with Anaheim chiles, fresh or canned. Keep in mind the bulk of the hot spice is in the seeds and discard them if you want the flavor without the burn. If you use fresh, you will need to roast or blister the peppers and peel them. I add chicken or turkey to the stuffing then bake them in a casserole rather than frying them. They can be made without the meat, if you prefer a meatless dish.

Rene’s Chicken Chile Rellano Casserole

1 – 16 oz can Fire-Roasted Whole Green Chiles (approx. 8)
1 cup Fire-roasted Diced Tomatoes, Mexican style or add onions and peppers, if desired
8 ounces Chicken Breast, diced or shredded
8 sliced sticks of Sharp Cheddar Cheese, about ½” x ½ inch and long enough to fill the chile
4 oz Cream Cheese, softened
1 cup Shredded Mexican Four Cheese blend or Cheddar and Jack Cheese
4 Eggs
1/2 cup Heavy Whipping Cream
1/4 cup Water
1/4 cup Sweet Peppers, sliced (optional)

Preheat oven to 400 degrees F (200 degrees C). Spray a 9×13-inch baking dish with cooking spray.

Split the chiles open and stuff each with chicken and 1 tablespoon of cheese.

Whisk together the eggs, cream cheese, and cream with 1/4 cup water in a bowl, add salt and pepper, a bit of garlic powder and 1/4 teaspoon of red chile powder (if desired). Pour the mixture over the chiles and cheese. Top with sliced sweet peppers and remaining cheese.

Bake in the preheated oven until set, about 40 minutes. Remove casserole and cover with aluminum foil to keep warm.


While the casserole continues to set, heat diced tomatoes in a saucepan. Add chopped onions and peppers, if desired. To serve, carefully cut along the chiles to try to remove them as a whole chile rather than just cutting the dish into squares.

Each serving is one chile topped with diced tomatoes.
About 270 calories and 5 net carbs per serving.
