Quick to Make Malibu Chicken

Better than a restaurant’s version!

I recently ordered Malibu Chicken at a restaurant that was noted for it. To be frank, it disappointed me. The skinny chicken piece tasted bland and dry, even the breading brought little flavor to the meal. I figured it wasn’t that hard to make and I could substitute a low carb breading pretty easily.

I found this recipe at Low Carb Maven’s website and made a couple of changes to it. She used crushed pork rinds for the breading, which is okay, but my experience with them in the past was that they came out soggy. I substituted with an almond flour topping. It also tends to get a little too moist from the chicken, but I think it tastes better than the pork rinds. You can use whichever works best for you or eliminate the breading altogether. It makes a delicious chicken dish without it.

I buy large chicken breasts, usually about a half pound each, so one breast easily makes two servings. If you use smaller breasts, figure on one breast per person. I also use a thicker slice of ham on it than the original recipe stated. I like to taste my ham. I didn’t have Swiss cheese, so I substituted slices of Edam cheese. I think any similar cheese will work in the flavor profile.

Malibu Chicken

2 chicken breasts (6-8 ounces each)
salt and pepper
4 pieces deli ham (1/4-inch slices)
4 slices of Swiss cheese

Malibu Dipping Sauce
1/4 cup mayonnaise
1-1/2 tablespoons yellow mustard (or Dijon or a combo)
1/2 tablespoon sugar substitute or Sugar-Free Honey

Crumb Topping
1/2 cup Almond Flour or finely chopped almonds
1/3 cup grated Parmesan cheese
1 teaspoons Granulated Garlic
1/2 teaspoon Onion Flakes
pinch salt
pinch Black Pepper

Preheat the oven to 350 F (180 C) degrees and place rack in the middle of the oven.

Pat the chicken breasts dry with a paper towel. Season with salt and pepper. Cut the breasts in half so you have four about equal-sized pieces.

In a bowl, mix almond flour, parmesan, garlic, onion flakes, and salt and pepper. Sprinkle 1/2 of the crumb mixture in the baking dish about where each breast will be placed.

In a small bowl, add the mayonnaise, mustard, and sweetener and stir until blended. Reserve about 1/2 of the sauce for dipping.

Use a pastry brush to spread the sauce over each chicken breast on one side. Place the coated side of the chicken on top of the crumbs. Now, brush the top of the chicken with the mayonnaise sauce. Sprinkle the rest of the crumb mixture over the top of the chicken breasts.

Bake for 30 to 40 minutes or until the chicken is cooked through. Poke the chicken with a fork to make sure any juices are clear or test with an instant-read thermometer to see it reads 165 degrees F (75 C.) Remove the chicken from the oven and add a slice of ham and cheese on top of each piece. Return to the oven for about 5 minutes until the cheese has melted.

Makes 4 servings.

A Variation on a Classic Sandwich

This recipe comes from Chef Gregory at Tova Foods, the makers of Carbquik. It’s easy to make and tastes great. The flavors go together and appreciate the slight sweetness from the jam in it. I like to eat it with Cranberry Mustard, although any mustard or mayonnaise will complement the sandwich.

Although I used Carbquik to make it, you can use almost any low carb baking mix. If you want to try almond flour, it will probably work, but you may need to add 1/2 teaspoon of Baking Powder, a pinch of salt, and about 2 tablespoons of softened butter to the bowl. Like Bakesquick, Carbquik has these ingredients mixed into it.

I recommend using parchment paper on the bottom of the pan. It will prevent sticking. Even with spraying baking spray on the pan, I’ve had my baked goods stick to the pan. So cut a piece to fit and spray it with baking spray, and this should come out easily. I used LC Foods sugar-free Raspberry Jam for my sandwiches, and I also tried it with thin slices of apple in place of the jam. If you use Smucker’s sugar-free jam, the carbs will come out about 1 carb higher per sandwich.

Baked Monte Cristo Sandwich

1 cup Low-Carb Baking Mix
2 tablespoons Golden Flax Meal
1/2 cup Half and Half Cream
1 Egg
4 ounces Swiss Cheese, thinly sliced
4 ounces Deli Ham, thinly sliced
4 ounces Deli Turkey, thinly sliced
2 tablespoons Sugar-free Strawberry or Raspberry Jam

Preheat oven to 400 degrees (F.). Prepare a 6x6x2-inch baking pan by cutting a piece of parchment paper to fit the bottom. Spray the paper and sides with cooking spray.

In a small bowl, mix baking mix, flax meal, half and half, and egg together to make a thick batter. If the batter is too thick, add water, a tablespoon at a time, to make it thin enough to spread easily. Spread half the batter in the bottom of the baking pan.

Layer 1/2 of the turkey, then 1/2 of the ham, and 1/2 of the Swiss cheese. Spread the sugar-free jam over the top of the cheese. Then repeat the layers– turkey, ham, and cheese. Spread the rest of the batter over the top and smooth it to the sides of the pan.

Bake about 30 minutes until the top is golden brown. Let cool for five minutes. Cut into four pieces and serve.

Makes four 3×3-inch sandwiches. This will serve four when you add a side salad. If you’re really hungry, it will feed two.

Delightful Summer Tuna and Cauliflower Salad

Looking for summer to come around the corner any time now and my thoughts are turning to fresh, tasty salads. Actually, we had a hint of the warmer season this week in Reno before it turned chilly again. In celebration of those two days of bright sunshine and heat, I made this yummy tuna and cauliflower salad. It’s packed with delicious vegetables and enhanced with a light lemony mayonnaise dressing. If you like tuna, you should love it. If you don’t like tuna, here’s a tip… you can substitute in chopped chicken or turkey.

Tuna and Cauliflower Salad

2 cups Cauliflower flowerets
9 ounces White Tuna, water packed
3 tablespoons Lemon Juice, divided
2 hard boiled eggs, chopped
1/2 cup Jicama, cubed
12 oz. jar Artichoke Hearts, drained and quartered
2 tablespoons fresh Parsley, chopped
1/2 cup Mayonnaise
1/2 cup grated Cheddar Jack or Swiss Cheese
1 teaspoon Sugar Substitute
2 cups Mixed Lettuce, (Spring Mix)
8 Cherry Tomatoes (optional)*

Bring a pan of water to a boil and cook the cauliflower for about 15 minutes until fork tender. Drain thoroughly.

Drain tuna and place in a large salad bowl. Use a fork to flake it apart. Sprinkle with 1 tablespoon lemon juice and gently toss.

Add artichoke hearts, cauliflower, cheese, jicama, and eggs and toss together gently.

In a small bowl, mix the mayonnaise with remaining lemon juice, sugar substitute, and parsley to make a creamy lemon dressing. About 30 minutes before serving, add dressing to the salad, toss gently and chill for about 15 to 30 minutes, then serve over a 1/2 cup mixed lettuce in each bowl.

Makes 4 servings.

* With tomatoes, add 0.5 net carbs per tomato.

TIP: Use foil packaged tuna packed in water instead of canned tuna. It’s a little dryer so it doesn’t need to be drained, and it doesn’t carry the tinny taste of canned tuna.

Without the tomatoes, this recipe is suitable for Induction on the Atkins Low Carb Diet.

Tastes of the Season: Crustless Brussels Sprouts Pie

Depending on how you feel about baby cabbages, as we tend to call Brussels sprouts around our house, this could be a great recipe or one to avoid. I will mention here that you can substitute other vegetables, such as broccoli, cauliflower, and kohlrabi, for the sprouts and it will make a very taste quiche.

I served this with prime rib for Christmas dinner and it was a hit with even someone who wasn’t that crazy about Brussels sprouts. So, for the adventurous, here’s a different side dish for the holidays or any time. This is based mostly on a recipe I got from 12Tomatoes.com and adapted a little bit. I eliminated the crust since most of the carbs are in it, which leaves a much lower carb’d dish. I also added a little ricotta to tone down the eggs and add more texture.

Crustless Brussels Sprouts Quiche

2 cups of Brussels Sprouts, trimmed and outer leaves removed
1 cups Heavy Cream or half-and-half
1 cup Gruyere or Swiss cheese, grated
2 Eggs
2 tablespoons Ricotta Cheese
1/8 teaspoon Nutmeg
Salt and freshly ground Pepper, to taste

Preheat oven to 375 degrees (F.) Coat a pie plate with butter or cooking spray.

Bring a pot of salted water to a boil and cook Brussels sprouts for about five minutes until fork tender.

Arrange the sprouts in the bottom of the pie plate, standing them on end if possible. I used frozen sprouts and they refused to stand up. Sprinkle the grated cheese over the top.

In a medium bowl, add eggs, cream, ricotta cheese, and seasonings. Whisk together until blended, then pour carefully over the sprouts.

Bake for 25 to 30 minutes until golden brown. Remove from the oven and cool a few minutes before servings. It will deflate some.

Makes 6 to 8 servings depending on appetite.
